I had 2 eggplants in the fridge and some ground beef and have been thinking since Thursday about making stuffed eggplant.
Slice and scoop two small eggplants. Salt and drain the shells and insides. Pre-bake the shells and then stuff.
The stuffing is made with the eggplant insides, beef, onions, garlic, tomatoes, parsley, breadcrumbs and a herbed Chèvre cheese. Topped with some shredded cheddar partway through baking, and voilà!

Seasoned ground beef and diced tomato make up the filling for these yummy stuffed red, yellow and green sweet (bell) peppers. They were so delicious -- got raves from everyone in the household.

Rather than using onion & garlic powder, I sauteed a 1/2 onion with a clove of garlic in a little bit of olive oil. When done, I put them aside, and cooked the ground beef in the same pan. When the ground beef was nice and brown, I removed it from heat, added the onion & garlic along with the diced tomatoes, tomato sauce, a bit of salt, pepper and Italian seasoning. Instead of mixing the rice into the stuffing mixture, I served it on the side, with a bit of thinned tomato sauce.
One of the curiosities of these old abandoned buildings is how much trash they produce. I suspect it is largely because they become 'trash magnets' as they sit and rot. The thinking must be if the city officials and owners don't care enough to tear down this dump, then a dump it is. I'll just toss my crap on the pile.

Since I entered the workforce, I noticed lots of social issues, bully, pressure, racism, uneven distribution…etc.

I had a bad fall a couple weeks ago and today is the first day that I have felt much like doing anything. John and I made our homemade pizza only this time, we stuffed the crust with cheese. OMGosh it was so amazing, I made a compound butter with garlic and brushed the crust just before we put it in. Delicious! John's half has sausage and mine is cheese with mushrooms and red onion. What a delightful evening meal! This was the first time that I had made a stuff crust and my mind is spinning with combinations of things that you could stuff it with. Something with ranch dressing or blue cheese stuffed in the crust and strips of london broil, mushrooms, more tangy cheese and red onions of course on the top! YUM!

Stuffed kabocha pumpkin, right out of the oven. This is one of my favorite things to eat. The stuffing includes bread, bacon, sausage, onion, celery, and herbs.
Every once in a while I glance at the growing collection of miscellaneous stuff that has been accumulating on the shelf behind our garage and I wonder, "What IS that?"
This is a small section of a 20 X 20 garage that is used for storage . I own a framing and carpentry business with as many as 30 carpenters and as few as 5 depending on the work available. This garage houses generators, compressors, band saws, wall brackets, pump jacks, lull forklift parts,hunreds of hand and power tools and a huge supply of hardware. Supplies are shifted from garage to job on a daily basis most of the time in a last minute rush. Once every week or two it is organized but in a few days it is trashed again.
