Easter Sunday is upon us and it brings along a plethora of dining options in the city. 1911 at the classy Imperial is having an Easter Brunch this Sunday and going by the food I sampled there yesterday, is unmissable.
Other than the traditional Easter grub, Chef Vishal has laid out many Mediterranean dishes that liven up the menu. There is a pineapple Gazpacho is a refreshing departure from the tomato base and the smoked paprika gives it a spicy kick.
One of my favourite dishes will be the Prawn Escabeche. Again a departure from ceviche, this flavourful dish has a special blend of flavours in the marinade, giving it a deliciously sharp tang.
For the vegetarians, I will recommend the stuffed artichokes. These are high quality spanish artichoke hearts covered in a delicious spinach filling. Creamy and flavourful this will satiate most meat lovers too.
I loved the lamb chops on polenta. The braising (as opposed to just roasting) makes the lamb deliciously moist. I must write about the polenta as even on its own it was smashing. Tossed in just some parmesan and olive oil it highlighted Chef Vishal's philosophy of rustic, simply cooked but delicious dishes.
The other two standouts were the Confit of chicken and the Veg lasagne. The chicken was moist beyond belief and combine that with streaks of perfectly cooked bacon made the dish very special indeed.
Among the many desserts, the macaroons were truly special. I'd be hard pressed to find better macaroons in the city, an absolute treat. For chocolate lovers there is the chocolate verrine, basically a superb chocolate mousse with a dark chocolate syrup spooned on top. Sinful and indulgent, this kind of stuff is what Easter is made up of.
Executive Chef Vishal Atreya is planning to have a spread of nearly 70 delectable dishes so round up your family (or brunch crew) and head here to get your fix of eggs, chocolate, leg of lamb and bloody Marys.

As a photographer, one place you would feel humbled is a bird sanctuary.... for not only is bird photography insanely difficult unless you have a really fast lens with good zoom but also you will see that most of the times your compositions go for a toss. Add to it the pain of focusing on a rapidly moving object ... not my cup of tea :)
Considering I am too lazy to remember / identify the bird, anyone care to name the species?

These standout Hummers visit us only in late summer, arriving around the beginning of July. Other more northern breeding Hummers also pass through NM. The Calliope is regular, but not common at lower altitudes (We're at 8600 ft. msl.). I have rarely spotted them up here this high.

I had hoped for better with this roll, and there are some standout images. Microphen is a great fit for the film, but I think the trouble is the filter. Some of the results looked a lot like my D-76 roll. The contrast in the images that work is wonderful, as are the edge sharpness and grain structure. But that green filter did not do what I thought it would.

I drove past these pots for years. They belonged to a nursery. Then one day the hothouses were struck down, nursery ploughed over and pots loaded up and taken away. Not sure if the nursery sold up to a farm or they just found strawberry business to be more lucrative. I'm glad though that one day I got out of the car and took some shots of the patterns made by the thousands of stacked pots.
It was a gray and rainy day and I did not hold out much hope for good pictures. However, the gray was a perfect background for the stunning uniforms of the Royal 22e Régiment's changing of the guard ceremony which is held daily in the summer at the Citadelle in Quebec City, Quebec, Canada.

Standouts for me were both Goose Island beers, The Nightstalker and Imperial Coffee Stout. The Nightstalker is their imperial stout before it's aged in bourbon barrels resulting in their infamous Bourbon County Brand Stout.

Jacqueline Rachelle "Ray Ray" Cole, a standout soccer player, was inducted into Lewis and Clark Community College's Trailblazer Athletics Hall of Fame in May 2013. Cole, a forward from Kansas City, led her team in scoring in 2003 and 2004. Both years she received All Conference, All Region, All District and National Junior College Athletic Association (NJCAA) All American Athletic Honors. She was ranked No. 15 in the nation in scoring during the 2004 season and was selected first team to the NJCAA and National Soccer Coaches Athletic Association (NSCAA.) Cole went on to play soccer at McKendree University, leading her team to two NAIA Region V Championship titles and taking them to NAIA Nationtional Championship Tournament.
