This is the second time I made this "rabbit salad". I think it's perfect for summer evenings and picnics. I'm sure I will make it more often this summer.

I cooked the rabbitlegs sous vide again (9 hours at 84°C), then I seperated the meat instead of cutting it into cubes. I'm not sure this was a good idea, because with the sauce it became a bit sticky/lumpy. Still nice to eat though.
And instead of the 2 T cooking oil I used home-made sichuan chili oil and cashews instead of peanuts.
I took a few shots of this cute rabbit on the grounds of Hessilhead Wildlife Rescue Sanctuary where I volunteer on Sundays. This wild rabbit was taking advantage of the trough of food put out for the juvenile swans that are in care at the sanctuary (see below).
I think that this is my best rabbit image to date. Two of them were happily feeding on the grass near the main entrance to the reserve, and most unusually I was able to get fairly close without them running away.
We managed a nice little walk out in the sunshine today...it was terrific! The most special moments for me were spent with a rather sweet little Rabbit who I discovered burrowing in the local cemetery. She was a little unsure of me at first, but as I chatted away to her in my usual friendly manner she soon warmed to me and after spending a few minutes grooming herself she continued to dig. I felt a bit like Alice In Wonderland...except the Rabbit wasn't white...and although I was tempted to follow her down her burrow, I resisted the temptation so that I could stay above ground and create this slideshow of the many shots I took for my flickr friends ;)
My evening visitor has become more relaxed with me. He (she?) no longer goes as still as a lawn ornament but goes about its business eating birdseed that the birds spill from the overhead feeder.
First time i've seen a rabbit in my backyard! This little guy just took a stroll through, munching on things as it went.
Apologies for the horrid quality! I took it at a 60 degree angle through 1" thick double pane glass.
This little guy let me get right up to him to take his picture. He was living in an overgrown island in an abandoned movie theater parking lot in Connecticut. I was working and almost stepped on him!
A cute rabbit in my yard. There were actually 5 of them together, which is the most I've seen at a time even though they're very common. (They can sometimes be annoying, eating my plants and flowers.... especially lilies.)
