Open face sandwich with leftover roast chicken. Tossed some baby arugula and cherry tomatoes with red wine vinegar, EVOO, salt and pepper to taste. Spread some pesto on a piece of sourdough, and lightly toast it. Then topped the toasted sourdough with baby arugula, cherry tomatoes, shaved parmesan and cranberries....and of course the roasted chicken breast. Simple, quick and good.

While driving back to the office after a long call, I quickly stopped to get a shot of this eastbound CP stacker.
