Anyone ever have a "flourless" peanut butter cookie? Today at Susie Cakes bakery in Menlo Park, Calif., I took the plunge. Well, it was very good, so I have to give this treat a little Flickr love.

My squirrels were getting on the heavy side, I had to switch them over to reduced fat peanut butter.

Peanut Butter, pt. 2 "The Chili Connection"
I love P.B. sandwiches with my chili.
Whenever we had chili in school. They would always serve it with PB sandwiches. It just always seemed natural to me... as an adult. I have come across so many people who think it's odd. They never heard of such a thing. I think to myself, "where did they go to school?"
Every once in a while I'll find someone like me. I know one guy who actually will put a spoonful of PB "IN" his chili. I haven't been able to bring myself to do that yet.
O.M.G. --- Let me tell you. It's amazing how everyone has their own take on how to make chili. I used to work with this girl who always put refried beans in her chili. She swore by it... I thought. OK, I'll try it...
Well, I tried it. I made this huge pot (is there any other way?). I put the "refried beans" in it... took a bowl. Ate it... UH!!! It just laid in my stomach like a brick. I never felt so miserable after eating... I ended up throwing the whole thing away...
I don't even want to think about later...YIKES!!

Scavenge challenge - getting to know you. If I have real peanuts or these rings in the house I find them really hard to resist.

Made with peanut butter, brown sugar, Splenda (to cut down on the total sugar content), butter, milk, eggs and vanilla. I love them warm, right out of the oven, with an ice cold glass of milk!
So my dessert is pretty low key. I have quite a few over the top dessert recipes but they all involve chocolate. And I cannot control myself around chocolate and since I am watching my weight I will save those recipes for the cookbook?? lol
Peanut Butter Cookies
cream together 1/2 cup butter and 3/4 cup peanut butter, add 1/2 cup brown sugar and 1/2 cup white sugar. Add two eggs. In a separate bowl mix together 1 3/4 cups flour (I use whole wheat), 1/2 tsp salt, 1/2 tsp baking powder, 1/2 tsp baking soda. Add this to the peanut butter mixture and mix well. You can add chocolate chips at this time which is sooo good!!! Roll the dough into 1 inch ball and roll the balls in sugar. Flatten each ball with a fork on the baking pan. Bake in a 350 degree oven for 10-12 minute, until cookies are golden.
