The lab is our Corner Stone of Quality. Microbiology deals with the structure, function, uses, and modes of existence of microscopic organisms.
You don't need to be a beer scholar to know that the physical act of brewing is important to making beer. But what many don't know is that the part of brewing that can't be seen with the naked eye, the microbiological process, is equally important. The microbiology lab is our cornerstone of quality, as the lab analyzes every raw ingredient through to the finished bottle of beer. Many of these tests go far beyond microbiology to include chemical and technical analysis.
Our quality team, along with brewers, tastes every batch of beer to insure proper quality. This goes well beyond taste. These experts are monitoring yeast growth and oxygen pick-up, as well as analyzing hops, shelf stability, pH testing, alcohol content and many more items-basically everything that CAN'T be seen in the beer. Each batch of Tröegs beer passes through a 100 point quality checklist before it is released.
At the height of fermentation a 300 bbl tank would have more than 4 quadrillion active cells- that's 4,000,000,000,000,000 cells.

In the medical research lab of Castle Destro, a team of Destro's doctors frantically analyze some samples taken from Fergie and Lennox. Both Lennox and his wife are in a locked holding room, being watched on security camera. The Grenadier Trooper in charge of security looks to his partner.
Grenadier Trooper 1: Look at that! The mutation is complete!
The second Trooper hits an intercom, notifying the doctors and nursing staff of the potential for danger while the first Trooper looks on in awe.
Trooper 1: The transformation was so slow and then, boom! Monsters!
The nursing staff start to panic slightly as the mutant Lennox and Fergie begin to pound on the door. The second Trooper calls Darklon.
Trooper 2: Darklon, this is Trooper MacKinnon in the medical bay. The Joes have fully mutated. They have gone feral. We need back up asap.
Darklon: What? Back up? You ARE the back up! I have a whole Wing to worry about here! You’ve got two mutants in isolation! Deal with it!
Darklon ends the communication as the Trooper looks to his partner.
Trooper 1: Is help on the way?
Trooper 2: We are the help. Come on, let’s go.
