I ended up cooking it for 3.5 hours and this is how lovely and dark it got. The meat was falling off the bones, the sauce was action-packed from the fat back and cognac and pomegranate, the beans kept their shape.

Our friend Crystal can't have wheat so this is one of the things I introduced her to for when she craves some chewiness in her carbs. I've tried both ground pork and beef as fillings but personally I like the beef better. Charlie, on the other hand, likes ground pork, which is what's traditionally used.
