This is 薄饼, something liked 春卷 or spring roll/egg roll done Hokkien style. It is an old dish passed down by my grandmother, and after so many years, and some improvements/modifications, it has become one of my mum's signature dishes. However because of the lots of efforts required in preparation of this dish, this time my aunts all lent their hands to make it a success. Thanks to all of them.

For those who do not know what it is, it's a little liked fajitas, with the thin skin made of flour. The ingredients include lettuce, fried mixed vegetables (comprising turnips, carrots, leek and fried bean curd, with added taste of deep-fried 扁鱼), bean-sprouts, sliced eggs (sometimes shredded omelette). The sauce include minced garlic, chilli and sweet sauce. These are topped with grounded peanuts. Everything will be rolled up and we are ready to eat it.

Tonight's dinner: diced chicken breast cooked with tomatoes, peppers, habaneros, olive oil and red onions served over white rice. Very spicy and hot.

I made some meatball (with paprika, cayenne peppers, curry, onions, crushed peppers, etc.) and then I made some saffron rice with pimentos and garlic. It was pretty good, needs some tweaking (I used rice because I was out of pasta).

- grilled salted mackerel

- boiled spinach sesame sauce

- simmered mushrooms

- tofu and myoga onion miso soup

- rice

broccoli, chicken, leek and potato soup, rice

Chili: banana peppers, jalapenos, chili peppers, chili and cayenne powder, ground turkey and beef, tomato sauce, tomato paste, salt, black pepper, fresh tomatoes, mushrooms, black beans, garlic, and onions. I let it simmer for another 90 minutes after this photo to let the pepper heat build up.

Ground Beef, Mushrooms, 1 bag Frozen Veggies, Roux, Milk, Chicken Stock. Pasta shells. Garnish with green onions.

I have been home sick for a few days and the unexpected time to myself allowed me to cook almost every day. Even cook for others, who dropped in to make sure I was still alive.

This was Thursday. Grilled Scottish Salmon fillet, fresh from...the freezer in a Bajan supermarket. But it was still pretty good.

Marinated briefly in lime, salt and black pepper. It had great outside, and a bit rare on the deepest insides.

Eggs over easy, fried in sausage & bacon fat. Spicy sausage patty. Potatoes browned with diced onions, red & green peppers. A buttered sour dough biscuit.

I cut up an entire chicken and then shook the pieces in a bag full of flour, paprika, chili powder, salt, black pepper, Slyvia's Soul Food Rub,and Adobo. Baked for 1 hours at 375 degrees (turned once after about 40 minutes),

 

I made enough for several meals.

 

I also boiled up the backbone and neckbone to flake the meat off for my dogs.
