This one wasn't a CNE program recipe - just a creation of my own. But still a very healthful lunch alternative to a burger and fries - and every bit as filling and satisfying!
If one of your New Year's resolutions is to eat healtier, know that eating healthy doesn't have to equal no taste. This dish is an example of that.
I'm no stranger to some good full flavor (check out my Football Food For Fans set and you'll see) and I like to do the same with lower calorie meals, like this dinner I had tonight.
I took a nice piece of salmon, "painted" it with some olive oil, a little gray salt, a little pepper then put it in the oven at 375 degrees for about 10-12 minutes. I pulled it out, squeezed some lemon on it, and then put it under the broiler to finish.
As soon as it came out, I spooned a Country Mustard topping on it (1 tablespoon Dijon Country Mustard, 2 teaspoon Dijon mustard, a bit of red wine vinegar to give it some added flavor and to thin out the mustard abit, pepper and dry dill.Whisk it all together and you have a tasty mustard dressing for fish, salads or even steak.) This warmed the mustard to compliment the fish.
On the side, steamed broccoli. I put some florets in a tupperware container, put in a bottomful of water, loosely covered it and put it in the microwave for just 2 minutes. It comes out tasty and crunchy with all the nurtients. For a little added flavor, I put a few pinches of parmagiano romano shredded cheese over it.
Simple, quick, healthy. Bon appetite!
Fun new appetizer that is easy and actually somewhat guilt free - here is the recipe - coreyrecipes.blogspot.com/2015/03/mini-brie-and-apple-qui...
I love food, and I love to cook. After my diagnosis, I had to relearn the way I cooked. I made a conscious choice to stick to a low carb diet. I use the oven more regularly, and use a cooking spray like PAM instead of oil. It is possible to cook delicious meals that are nutritious, tasty and low carb. This photograph captures my creation for lunch today.
Stir fried tofu, yellow beans, asparagus, onions, mushrooms, garlic and ginger flakes stewed in a soy/ginger broth, with fresh grated pepper. About 20 grams of carb in one serving.
