They are commonly boiled or steamed; for either method, keeping them alive until they are cooked can help avoid food poisoning, but frozen and refrigeration storage methods are also very common, and safe. Hardshells (lobsters that are several months past their last molt) can survive out of water for up to two days if kept refrigerated.

This is my second Cinelli MASH fixed-gear build: Crook Type 3...built as a replacement for the original Crook, which was ridden on Aids Lifecycle 9 2010, from SF to LA. Yes, we did it fixed! I sold the frame and overhauled the bike as a conceptual metamorphosis in the wake of all those miles. The green of this variant is hard to capture on film. It's amazing!

Inspiration for a hardshell carbon-fiber bag; tied down to the rack with velcro & an elastic cord that hooks to mountpoints near the upper front corners of the bag. (The 8x9 rack is maybe a little too long for this bag, but at least it allows for room to roll up a jacket and tuck it out of the way.)
