I cooked this USDA Choice (from Costco, of course) filet mignon a bit rarer than I had intended (REALLY rare--perhaps might be termed 'blue'), but it was really outstanding.
Some people would be astounded/horrified to see how far my taste in steak w.r.t. doneness has changed in the past few years.
I'm torn now on whether I should buy the USDA Choice filet mignon or the USDA Prime rib-eye at Costco because this was so good.
Oh, and with it we had some potato salad from a package also acquired at Costco. It was decent cold, but better heated (that's what the two different colours/looks are).
