Iberico ham and potato with soft boiled egg
1/2 potato per person
1 egg per person
1 slice Iberico ham per person
Extra virgin olive oil
Salt and fresh ground pepper
Wash potatoes and put in a pot and cover with water, bring to a boil, turn down heat and simmer until you can easily pierce them with a skewer (about 1 hour). When done drain in a strainer. Put eggs in a pot, cover with water and bring to a boil, cook for 1 minute and the turn off heat, cover the pot and let them sit for 3 minutes. Drain the eggs and cool them enough to handle under running water. Peel the potatoes, slice each one in half and put one half on top of a slice of ham on a plate and crush the potato halves with a spoon so they crumble. Sprinkle with some salt and extra virgin olive oil. Carefully peel the soft-boiled eggs and tear then in half on top of the potatoes, sprinkle with a bit of salt and a twist of the pepper mill.
