In this photo there is a McDonalds cup right above the entrance to an elevator at the Court 17 apartment complex behind school. It looks as though someone either wanted to get rid of their trash or perhaps didn't have enough hands and put it there without thinking. Ironically when I went to take this picture the first thing I did was look around for where to put the cup I had in my hand. I actually had seen this cup before we were assigned this project while going up the elevator. When I returned after it was assigned it was still there for me to take a photo of.

Egg tarts!
Used pre-made puff pastry for the shells, as I'm a lazy bint.
The custard was made with sugar, milk, cream, yolks, and a pinch of vanilla, using the recipe here. However, I also added some vanilla to the mix, and used a combination of castor and icing sugar (as opposed to plain ol' sugar) for a finer texture.

We travelled East from Kale Koy village to a beautiful anchorage at Gokkaya Limani. Fresh water springs from the sea bed left a layer of tantilising cool water on the sea surface. Along the way, Vivienne and Willie explore this sea cave.

This was my first attempt at homemade enchiladas...
Filling
Ingredients:
3-4 (medium-size) chicken breasts boiled and shredded
1 1/2 cup chopped yellow/white onion
1/2 cup chopped red onion
1 small can of diced black olives
1/4 cup chopped cilantro
1 10 oz.-can of cream of chicken soup
1/2 cup of chopped green chiles (fresh is best but canned will do)
1/2 cup sour cream
2-3 cups of shredded Mexican cheeses
1-2 tbsp of garlic powder (to taste)
Salt and pepper to taste
Instructions:
Boil chicken breasts until done. Shred the chicken but pour the broth (2 cups) into a bowl and set aside for now. Put the shredded chicken back into the pan and mix in the cream of chicken soup, sour cream, yellow/white onion, one cup of the cheese, and garlic powder, salt and pepper to taste, heat but don’t boil.
Sour Cream Sauce
Ingredients:
1/2 stick of butter
1/4 cup of chopped green chilies
1/4 cup of flour
1 cup sour cream
Salt to taste
Instructions
In a sauce pan, melt butter, blend in flour, add chicken broth, and cook until mixture thickens and bubbles. Stir in sour cream and green chilies and salt to taste. Heat on low. DO NOT BOIL.
The rest
You can fry the tortillas in the traditional method, but they add a heaviness that I’d prefer to avoid for a number of obvious reasons. So I found another method that’s a light lighter: Spray both sides of each tortilla with a non-stick cooking spray then wrap them in a paper towel and place in the microwave and cook on high for 60 seconds.
Once tortillas are ready, spoon filling into each tortilla, roll and place them in a baking pan(s). Sprinkle a light layer of cheese over the tortillas then pour the sour cream sauce over top and bake at 425 degrees for 20 to 25 minutes. Serve piping hot.
Makes about 12-15 enchiladas.

The sun has just come out in the farm, the animals are happy (what a bucolic sight…)This is what we teach our children that places that exist with only objective to raise and exploit others, look like. Most children grow up thinking that the happy animals that live in farms, don't mind being exploited, hens don't care about their lack of freedom, they seem to not care, or be aware, of the death they will someday face for not being productive enough. (How funny, slaughterhouses are not shown in childrens books).

Currently Wales and the UK are awash with a tied of new fossil fuel exploitation, shale gas, coal bed methane and new open cast coal mines. So often cited as bridging too renewables, or replacing imported fossil fuels.

All of this new fossil fuel development will bridge to renewables, pay for it, not distract from it? Does our governance seem like they are leading the way to mitigating climate change, are we a shinning example to others countries to follow suit?
Doesn't a global bullet need to be bitten within a short time scale, or is the bullet simply being deflecting for future generations to deal with, and its real impact?
