Sweetbreads with Flavors of Picata
A crispy deep fried sweetbread chunk that was perfection. Thomas has never had sweetbreads with such perfect consistency and outside crispiness.
There were several smears and such to drag the chunk around in, olives, fennel powder, something slightly honeyed and I can't remember the rest.
So freaking good!
