Taken for the Friday Food Fiesta Week (Beans week)
When I bought these earlier in the week, I had thoughts about making a simple french bean salad, blanched and mixed in with pan fried crispy bacon, garlic and bacon oil with a dash of black pepper and sea salt.
Then I thought perhaps something a little more complex or different like french beans tempura for instance.
In the end, I've decided to present them the way I like to eat them best. On their own. Microwaved on high with a little water for 2 minutes or just simply blanched in water with a little salt to bring out their sweetness. This is, of course, before they went into the pot. :D
Seasonal berries (strawberries, raspberries, black and red currants) speckled by frozen raspberries (the separated fleshy fruit/seeds) and elderflower cream, and lemon balm.
Simple concept of berries and cream but tweaked with a mildly acidic edge. The combination was a thoughtful conclusion to the multi-course affair for various reasons: for those with a less hearty appetite, this was a pretty and delicate course to end the meal without heaviness; those looking for a palate refresher this was something cool with a tart component. It's simple, pretty and takes advantage of the fruits currently in season.

the "raseteurs" (dressed like dentists *g*) have to be very artistic..
In South France, bullfighting is known alternately as "course libre" or "course camarguaise". This is a bloodless spectacle (for the bulls) in which the objective is to snatch a rosette from the head of a young bull.
For a period of about 15-20 minutes, the raseteurs compete to snatch rosettes (cocarde) tied between the bulls' horns. They don't take the rosette with their bare hands but with a claw-shaped metal instrument called a raset in their hands, hence their name. Afterwards, the bulls are herded back to their pen by gardians (Camarguais cowboys) in a bandido, amidst a great deal of ceremony. The star of these spectacles are the bulls, who get top billing and stand to gain fame and statues in their honor.
Although the course camarguaise does not end in the death of the bull, it is at least as dangerous to the human contestants as a corrida.

Going back through some shots from the summer and realized I hadn't uploaded a few that I had meant to share. Nice to visit the summer again.
Students and Staff ran the Troup County Police Obstacle Course as their final team-building activity. The teams worked together to not only get each other through the course, but also their pet tire.
You should have seen them before the meal was started - they were big.
A very good selection of fish, meat and pate, with other French styles of food which you went up and selected for yourself.
For English eaters, please remember the main course will not be a heavy veg laden meal, best eat well on this part of the meal.

Braised short rib, goat cheese, pinenut.
Notes: My friends thought this was bland, but I thought the ragu component was rather lovely. It wasn't the most complex and nuanced ragu, but it was very lovely in a subtle way. The pasta was nicely cooked. The reason the dish might have seemed a bit flat was because I *think* it was missing the goat cheese, which I didn't realize it was missing until I thought about the dish more. Still, a very good ragu pasta.
