Las de hoy tienen nueces y chocolate negro, pero muchas veces las hago con avellanas y chocolate blanco. The equine adoption center had an open house & garage sale yesterday and this company (McCauley's) donated some cute cookies. This company also donates a good amount of feed for the horses here. As we were not hungry for sweets at the moment we did take a cookie with us which we shared in the car on the way home.
These are not ordinary cookies - they tasted exactly like the anise springerle cookies that David introduced me to years ago, and they nailed it with the flavor! Thank you, McCauley's!!!

This one has Chocolate, Peanut Butter and Butterscotch Chips added in.
NOTES......I like to buy the inexpensive pizza pans( $ 1) and bake on that and after it cools I wrap in cellophane and tie with a fancy ribbon and then give that to who ever this goes to as a bonus gift!
You have no mess!
If you need something smaller just make two 5-6 inch cookies out of this recipe!
You can even decorate your cookie with butter cream icing............
The possibilities are endless with what you can do with these from add in's to decorating.
This one was just going to hubby's crew so I left it plain and simple !
*Makes 1 giant cookie
INGREDIENTS:
1/2- cup white sugar
1/2 -cup packed light brown sugar
1/2 -cup butter, melted and cooled
1- egg
1/2- teaspoon soda
1/2- teaspoon salt
1- teaspoon vanilla
1 -1/2 cups all purpose flour
1- cup chocolate chips( or your favorite variety... I use about 2 cups worth)
DIRECTIONS:
Preheat oven to 350 degrees.
In a medium bowl, cream together the sugars and butter. Add the egg and vanilla and mix. Add the dry ingredients and mix well. Fold in the chocolate chips.
Line a large 12 inch pizza pan with foil or parchment paper and press the cookie into a circle. I press my cookie into a 9- 10 inch circle, about 1/4 to 3/8-inch thick. When it bakes, it spreads to about 11-12 inches, which fits perfectly onto a 12-inch round cardboard circle you can find at most craft stores.
If desired, top the cookie with M&M’s or any other garnishes. Bake for 13-16( mine most always take the full 16 minutes) until the cookie is lightly golden brown. Let the cookie cool completely on the baking pan – this helps the cookie stabilize and set so it can be easily lifted off the pan. Once cool, gently use the foil to lift the cookie off the pan.

This cookie is part of a Moomin set I made for a cookie swap. I have been wanting to make Moomins for ages but was always too busy with other things. So the swap seemed like the perfect opportunity. I loved making them. They're such funny, quirky characters, so full of personality.

Birthday cookies for a young woman who likes lizards, frogs and turtles. We tried for a Caribbean tin art feel . . . bright colors and fanciful designs.
Made these in conjunction with the shoe cookies. The shoe cookie cutter was larger than I expected and so I had to improvise to get a better scale with the handbag. Used an inverted heart cookie cutter and chopped off the bottom to get the handbag shape.

What if the gingerbread man wasn't eaten by the fox? What if he just kept running off to new adventures? Pondering this, I thought I'd like an avatar as the worst aspect of having fibromyalgia must be the isolation and an avatar would allow me to travel (actually just leaving the damn house would be a start!!) and who better than to act as my avatar... the gingerbread man of course still with his missing leaf ;)

I was never a fan of cookie recipes that use cake mixes, but this one is really good.
Strawberry Cake Mix Cookies
1/2 cup (1 stick) butter or margarine
8 oz (1 package) cream cheese
1 egg
1 tsp vanilla
1 package of Strawberry cake mix
Powdered Sugar
Cream together butter and cream cheese. Add egg, vanilla and cake mix. Refrigerate at least 2 hours.
Preheat oven to 350 F. Roll dough into walnut sized balls and roll in powdered sugar. Bake for 10 minutes. Sprinkle with powdered sugar and let cool.
Finally I introduce this girl, she arrived months ago, but sadly I never have time for my girls. Well she´s Cookie, my little sweet strawberry cake hehehe
