These were made for a co-worker's husband who likes fishing. I probably drove my husband nuts asking him what color fish were and making him look at a number of cartoon fish until i could find one whose coloring I could understand. Sometimes being colorblind can be a big hindrance.

Rich gooey chocolaty goodness a cookie for the chocolate lover !

Heres the recipe!

This recipe uses relatively little flour, resulting in dense, fudge-like cookies.

 

Ingredients:

4 (1 ounce) squares unsweetened

chocolate, chopped

1 cup semisweet chocolate chips

6 tablespoons butter

3 eggs

1 cup white sugar

1 1/2 teaspoons vanilla extract 1/2 cup all-purpose flour

2 tablespoons unsweetened cocoa

powder

1/4 teaspoon baking powder

1/4 teaspoon salt

1 cup semisweet chocolate chips

 

Directions:

1. In the microwave or in a metal bowl over a pan of simmering water, melt unsweetened chocolate, 1 cup of the chocolate chips, and the butter stirring occasionally until smooth. Remove from heat and set aside to cool. In a large bowl, whip eggs and sugar until thick and pale, about 2 minutes. Stir in the vanilla and the chocolate mixture until well mixed. Combine the flour, cocoa, baking powder and salt; gradually stir into the chocolate mixture. Fold in remaining 1 cup chocolate chips. Cover dough and chill for at least an hour or overnight.

2. Preheat oven to 350 degrees F (175 degrees C). Roll chilled dough into 1 inch balls. Place on ungreased cookie sheets so they are 2 inches apart.

3. Bake for 9 to 11 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I've prepared for Christmas eve. Too bad Santa didn't make it.

Buying Girl Scout cookies helps support a fine organization, and in today's mad world, it can also be a political act. WTF? Because GSA believes in diversity (including LGBT), a Right Wing Nut Job excuse for a bishop in St. Louis has asked his parishes to dump sponsorship of the Girl Scouts. I hope Pope Francis removes him for lack of Christian charity and setting a poor example.

 

The last time I tried their famous chocolate mints and peanut butter sandwich cookies, they weren't as good as past versions. However; their shortbread cookies shown here are still good, and I've gotten some on each of my last three grocery shopping trips. Many stores like HEB and Kroger allow the Girl Scouts to set up their cookie displays outside in front of the store or inside the entrance. The stores won't lose any business but will gain community goodwill. except among the Right Wing Nut Jobs. It takes a really mean-spirited person to hate the Girl Scouts. Of course, some of them are running for President / Fuehrer.

 

The girls selling them weren't all Anglo either. There was a nice diverse mix of girls including several of their mothers wearing clothes from several Asian countries. That means today's assortment of Girl Scouts will be tomorrow's American women doing all kinds of things, especially filling leadership roles. If there are enough Girl Scouts, our country will be in good hands.

 

My first attempt at a cookie splash shot. It's alot harder than it looks, particularly when your memory card is loaded with images and the burst mode runs slower than a tortoise.

Best Big, Fat, Chewy Chocolate Chip Cookie

 

I wouldn't say they were fat, but they're pretty big (1/4th cup of batter per cookie) and kinda chewy. It's a good recipe. I cut down the sugar, left out an egg yolk, and used HALF of the chocolate chips. Better than way, I think.

R25: Cookie Splash! Posting on Saturday for Cliché Saturday, as what can be more cliché than a camera lens splash?

I should thank my daughter and her husband for my Christmas gift last year - my lens cup. And I should also thank my wife for getting into the spirit of this challenge - she baked two dozed differently shaped chocolate chip cookies (to experiment with to find the biggest splash, of course!)

 

I placed the cup on a full length mirror, placed a red tablecloth in the background, used a soft box right of camera and a white reflector at camera left.

 

And yes, Stacie, it was fun splashing and eating the results! What great fun and wonderful push!

I baked all these goodies on the eve of Chinese New Year and I was sooooo tired at the end of the day.

 

From clockwise: Almond Rosewater cookies, Terry's favourite Almond cookies, Chocolate Hazelnut Biscotti (they were so difficult to cut!!!), Fudgy wudgy blueberry brownies (oh so fudgy and yummy!!!), Chocolate chip cookies and Pistachio Rosewater cookies. All the cookies are from Veganomicon while the Choc chip cookies are from Vegan with a Vengence.

I was in a baking mood that day, i just grabbed the best cookies recipe & started making them.

For me it was alot of fun making them, for everyone else it was alot of fun eating them =P

Sandwich Cookies from Amigurumi! by Elisabeth Doherty.

The equine adoption center had an open house & garage sale yesterday and this company (McCauley's) donated some cute cookies. This company also donates a good amount of feed for the horses here. As we were not hungry for sweets at the moment we did take a cookie with us which we shared in the car on the way home.

 

These are not ordinary cookies - they tasted exactly like the anise springerle cookies that David introduced me to years ago, and they nailed it with the flavor! Thank you, McCauley's!!!
