I peeled off a bit from the top, so you can see inside the calzone. But it's supposed to be closed! :-)
Quite possibly my most delicious concoction yet. Wheat/flax dough, avocado-tomato-black bean sauce, steamed green beans, asparagus, collards, peppers and onions. And some shredded cheese. mmm.
Robin made a beer pizza dough, we split it, added Grateful Growers smoked bacon, moz, ricotta, sauteed spinich & local shitakes.
This photo was taken last January when I stayed with Stacy's family while she finished up some schooling down in St. Vincent. Scott and I had just ordered up possibly the biggest calzones the world has ever seen.

THE GAETANO ~ Two crusts stuffed with salami, ham, tomatoes, onions, pepperoni, mozzarella and provolone. Served with a cup of the best red sauce in Denver (imo.)

buy dough from your neighborhood pizzeria (e.g. joe's on carmine)
fill with delicious meats, cheeses or fruits (e.g. prosciutto and ricotta or pears and gorgonzola)
bake, then eat.
