Inspired by "Karelian bread". Karelia is a region in Northeast of Europe near to Finland. I cry when I see this bread made with raisins, this is just wrong. Cranberry is the way.
Scald is similar to Borodinskiy:
80g of whole rye flour
20g is fermented rye malt powder
Coriander and caraway
Boiling water
Preferment:
Regular 100% poolish with 80g of white flour and 80g of water
Scald dried cranberries with building water
Dough:
Preferment + scald
220g of white bread flour
100-120g of water (I took water I used to scald cranberries before, make sure it was cooled down)
Salt, sugar
Cranberries were added before putting to a tin. I used lamination method
Brushed with coffee syrup: melt some sugar and add hot strong espresso to it, boil for several minutes

Cape Cod Cranberry Corn muffins, made with dry-harvested cranberries from Bill's Bog on Route 124 and stone-ground corn from the Stony Brook Grist Mill. Bill's Bog Berries are available at his roadside stand, usually after Columbus Day weekend. The Stony Brook Grist Mill corn is available at the mill whenever they're open. Usually Saturday's 10-2.
