These pieces of cranberry glass came from my ex-mother-in-law's collection.

A tasty ceral for breakfast with cranberrys and white choclate chips.

 

This is my 5th build for the Iron Builder with Matthew De Lanoy.

 

The seed part is the Brick Round 2x2 Dome Bottom.

The first time I made my own cranberry sauce I was amazed at how easy it was and how much better it tasted than the canned stuff I grew up with. Now homemade cranberry sauce has become a Thanksgiving must-have at our house.

The second 'Honk for Hope' UK coach event took place in Blackpool on 14/07/2020 and attracted around 200 coaches for a convoy along the M55 and along the Promenade before returning to the South Car Park at the end of Yeadon Way.

 

The purpose of the event was to raise awareness of the plight many operators currently find themselves in. The UK government has offered no financial help to coach operators due to the Covid pandemic almost wiping out their businesses.

 

The event was very well organised and attracted plenty of media coverage along with enthusiasts possibly enjoying their only event this year!

We eat a lot of this and bring it with us when we go places!

 

My tradition is to make it a few days ahead of Christmas in sufficient quantities that Paula doesnt worry about running out of it!

 

1.8kg of cranberries

7 bramley apples from our trees

600g Sugar

Freshly squeezed orange and lemon juice

Zest of a couple of lemons

Cinnamon 2tsp

Recipe:

2 1/4 cup flour, sifted

3/4 cup sugar

2 tsp orange zest

1 1/2 tsp baking powder

1/2 tsp salt

1 cup unsalted pistachio nuts

1/2 cup cranberries

2 eggs

2 tsp vanilla extract

 

1. Preheat oven to 165C, line baking trays with baking paper.

2. In a bowl of a stand mixer fitted with a paddle attachment, combine flour, sugar, zest, baking powder, salt. Whisk until blended. Add in the nuts and cranberries

3. In a small bowl, combine eggs, and vanilla and whisk gently to break the yolks

4. With the mixer on low speed, slowly pour in the egg mixture and continue beating until dough is well blended, the dough should clump together

5. Dump dough onto a clean surface. Gently knead dough (flour your hands lightly) until dough is smooth and nuts are well-distributed.

6. Divide dough into 2 onto the baking tray, shape each portion in to a log 25 cm long and 5 cm wide.

7. Bake until tops are cracked, about 40 min

8. Transfer the pans to a cooling rack and let cool 15 min. Turn up the oven to 175 deg C

9. When the logs are no longer hot, cut the logs on the diagnoal into slices about 1/2 inch think with a serrated knife. (Be gentle and use a sawing motion)

10. Arrange slices on a baking tray with new baking paper. Bake until biscotti is dried and crisp, about 20 min. Let cool completely

These were wonderful this morning, I topped mine with a little black currant jam, and had a cup of hot mint tea, and Alaina had her scones with some chocolate milk.

 

makes about 10 large scones

 

2 cups all purpose flour

1/3 cup sugar

1 Tbls. baking powder

1/2 tsp. salt

1/2 cup (1 stick) cold unsalted butter, into 1/2-inch cubes

3/4 cup heavy whipping cream, plus 1 to 2 Tbls. for brushing

1/2 cup sweetened dried cranberries, - coarsely chopped

 

1. Preheat the oven to 425 F. Butter and flour 1 baking sheet (or use a silpat)

 

2. In a large bowl, whisk together the flour, sugar, baking powder, and salt. With a pastry blender, a knife, or your fintertips, cut in the butter until the pieces of butter are no larger than tiny peas. With a fork, stir in the 3/4 cup cream just until a shaggy dough forms.

 

3. Turn the dough out onto a lightly floured surface, top with the cranberries, and knead briefly, just until the dough forms a ball and the cranberries are incorporated: do not over work. Quickly and gently pat the dough out into a 3/4 inch thick round. With a round biscuit cutter. Cut as many rounds as possible from the dough and place 2 inches apart on the prepared baking sheet. Gather the scraps of dough and knead together briefly, then pat out and cut out more scones. Brush the tops of the scones with the cream.

 

4. Bake for 13-15 minutes, or until the scones have risen and are golden brown. Transfer to a wire rack to cool slightly and serve warm, or let cool to room temperature.

A little holiday experiment...I was reading that fresh cranberries float. Wanted to see for myself! Here are the very scientific results!!

  

INGREDIENTS:

12 oz fresh cranberries, rinsed and drained

1 cup sugar

1 cup water

 

METHOD:

Combine water and sugar in a medium saucepan.

 

Bring to a boil; add cranberries, return to boil. Reduce heat and boil gently for 10 minutes, stirring occassionally.

 

Cover and cool completely at room temperature,

 

Makes 2 1/4 cups

Cranberries epitomize Fall food. Can you imagine Thanksgiving without them?

I baked this pie yesterday for Thanksgiving! It was delicious! Hope you all had a great turkey day :)

 

Here is the recipe that we followed. Although the recipe doesn't call for cinnamon. But what kind of apple pie doesn't have cinnamon in it?! Do yourself a favor and toss some in.
