This is a A beef on weck at Red Hook Tavern in Brooklyn, This sandwich is usually found in Western New York State, particularly in the city of Buffalo. The meat is some kind of roast beef (this is prime rib) and they're always served on a type of bun with Kosher salt & caraway seeds called a "kummelweck roll".
2 racks beef back ribs and 2 racks of pork baby back ribs. Been 5 1/2 hours at 225F, figure at least 1 or 2 more hours to completion.

Beeflies don't keep still unless they are drinking and although I got a couple of shots with the TZ3, this one with the TZ25 is suoerior because of the better shutter speed.
