Seen this in a window downtown and it reminded me of when my boys were little Bentley Bulldog's in school.

Salad in a jar for lunch this week!
Lately, I haven't been sticking as closely to the Gundry diet as I had planned earlier this year. Well... to make a long story short, I had some tests done and found out late last week that I have corn, dairy, and gluten sensitivities. I met with a dietician, and she told me to cut those from my diet for the next 6 weeks. We will then try to add each back in one at a time to determine if I can eat them again. The dietician was super helpful from multiple standpoints...the biggest one being that she herself has been corn, dairy, and gluten free for the last 9 years. So, at least she knew exactly what things to eat, etc. She gave me a bunch of recipes as well as a list of substitutions for things like bread, crackers, etc. and where to find them. One idea was this salad in a jar for lunches.
You basically make a HUGE salad and then fill 5 quart-sized jars. The heavier solids go on the bottom, and the lettuce is on the top. You leave off any dressing until you're ready to eat it. My jars have the following:
-Cucumbers
-Yellow peppers
-Quinoa tabbouleh (a recipe from the dietician)
-Tomatoes
-Broccoli slaw
-Shredded cabbage
-Roasted pumpkin seeds
-Two different types of lettuce
I made my standard balsamic salad dressing (which is fine for what I need to be eating). And, I'm happy to have a healthy, diet-friendly grab-and-go lunch for the week!
313.365 - November 9, 2013 - It was a great day! First, my Huskers beat Michigan in the Big House handing them their first home loss since 2010 and ending their nation-leading home win streak of 19 games! And secondly, after the game we headed to the Apple store to get my daughter's iPhone fixed and upgrade my 4S to a 5S! I'm loving the faster speed and improved camera! (Of course!)
I bought this egg for my mom in NH, and she has it hanging in her dining room. I thought it looked cool with the mirror in the background, and I did some post-processing on my phone to make it all fancy.
It was an interesting crowd at Zeppelin Hall in Jersey City aka "the beer garden in Jersey City". Behind us is Alpine Squeeze, the polka/oompah band that was our background music for the evening. You haven't lived until you heard a man playing an accordion sing "Que Sera, Sera" - followed by a "Zicke, zacke, zicke, zacke, hoi, hoi, hoi" and a rousing chorus of Ein Prosit.
There were hipsters, girls who thought they were going clubbing and ended up at a beer hall, a guy who could have been Kurt Cobain back from the grave, some other dude who was wearing a rainbow tank top and had a tattoo of an army ant the size of my hand going across his ribs, and the preppiest douches who ever lived sitting right next to us. They were all sitting there with the biggest sticks shoved up their uptight asses. The one girl kept clutching her purse like Trevor was going to steal it. Then made her boyfriend switch seats with her, because obviously Trevor is a threatening person.
It's a good time, everytime, at Zeppelin Hall.
We have been eating low-carb, high-fat (LCHF) since about August last year. As we have removed all breads, cereals, pastas etc from our diet, this is a good alternative breakfast. It includes a variety of nuts and seeds, coconut, and turmeric, which gives the lovely golden colour when baked in the oven. Add some high fat yoghurt, cream, and a portion of fresh or frozen fruit, and enjoy!
Seeing the moving truck arrive made it all seem real. After almost 3 years in Bridgeport, NE, the family is moving 2 1/2 hours east to North Platte, NE. Our mission is to help out another church that, well, needs help. We've agreed to commit to one year. Who knows if it will be more or less than that. But I figured this would be the perfect opportunity for me to attempt Project: 365 one more time. I am excited to document this next chapter of our lives, one picture a day, for the next year.

We brought back REAL MAPLE SYRUP IN A METAL CAN from Canada.
So Quincy made pancakes for breakfast.

New sofa and footstools delivered this morning, together with a second slightly smaller sofa for the side of the room. Very cosy!
