I have been making these from wafer paper over the past few days using this wonderful tutorial BY Kara's Couture Cakes and now I can't stop! It is strangely addictive! You have been warned! :-D x
The wafer roll is filled with a banana scented cream. The small lump of ice cream below it is shaped like a banana and flavoured likewise.

a just for fun purchase . . . vanilla flavoured white chocolate truffle in a crispy wafer cone topped with crunchy caramelised hazelnut pieces, chocolatey drizzles & a chocolate tip at the bottom :)
UNILVER TEAMS UP WITH KINNERTON CONFECTIONERY
Unilever UK is set to expand its licensing portfolio by teaming with the UK’s largest independent manufacturer of chocolate and novelty confectionery, Kinnerton.
The agreement will see Magnum, Cornetto and Mini Milk ice cream products launch in a confectionery format for the first time ever in the UK market.
Julie McCleave, head of licensing at Unilever UK, comments, “We’re delighted to announce our exciting new licensing partnership with leading confectionery supplier, Kinnerton. We are confident that bringing Unilever’s iconic ice cream brands – Magnum, Cornetto and Mini Milk – to market in a confectionary format will be a winning combination for retailers.”
Rachel Wyatt, marketing director at Kinneton Confectionery, adds,“We tested the range with consumers and both the concept and product scored extremely highly. In fact, the scores that we received were amongst the highest that we’ve ever seen. We’re confident that launching Magnum, Cornetto and Mini Milk chocolates into the UK Chocolate Count Line category for the first time it will bring additional consumer excitement as well as drive sales for the category.
McCleave adds, “As the UK’s largest ice cream manufacturer, with market leading brands boasting strong taste credentials, we’re well placed to enter into the chocolate count line category. By offering consumers confectionery from brands they trust, along with the clear and comprehensive strategies that Kinnerton has presented to us, we’re confident that the launch will capitalise on the growth in this market”.

Despite the wafers being a bit thick, I actually didn't think the cookie needed any more filling. I absolutely loved how they weren't just plain chocolate wafer cookies but spiced with nutmeg and cinnamon! :D
Orange Dreamsicle Cheesecake with Nilla Wafer Crust
For a 6" cheesecake pan. Makes a high, creamy finished cheesecake.
Crust:
Heat oven to 350.
Mix:
1 1/3 cup crushed Nilla Wafers
1/8 cup plus 2 tbps sugar
Grated zest of one large orange
(best to mix with fingers to help break up the bits of orange peel)
Add:
1/3 cup melted butter, stir lightly and pat into pan (will seem a little thick, but it's a high cheesecake)
Bake for 12-15 minutes, until the edges just barely start to brown.
Cheesecake batter:
Lower oven to 275
TIPS: use the slowest speed on your mixer, use superfine sugar (or put sugar in a blender first), be patient and make sure that with each mixing there are: no lumps, no grittiness, no bubbles (from mixing too fast). Scrape the bowl with a rubber spatula often.
Mix until super-smooth:
2 - 8 oz bricks of cream cheese
Very slowly add:
1 cup sugar
Mix in, fodling with spatula often:
2 tsp vanilla
1 tsp organic orange OIL (not extract - orange peel oil is much stronger and more fragrant and tasty)
Add, one at a time until mixture is an even color:
2 eggs
Pour into pan. Bake for 60-75 minutes, until the very center just barely jiggles.
Turn off oven, open door and let cool in oven for 15 minutes. Let cool on rack, out of oven, until room temperature. Cover with plastic wrap, pressing it to the surface (so steam doesn't cause water to collect), and chill in refrigerator overnight.

There was a cute little green lizard in one of the garden plants that we just had to get a photo of.
The Tunnock's Caramel Wafer, correctly known as the Tunnock's Milk Chocolate Coated Caramel Wafer Biscuit, is a bar consisting of five layers of wafer, separated by four layers of caramel. The bar is coated in chocolate, made from cocoa and milk solids. The wafers are wrapped in red and gold coloured foil. Dark chocolate wafers, wrapped blue and gold, are also available.
