Kales at Romera: A Romeran mosaic of powders, candy drops and sauces of tandoori, garlic, black truffle, tumeric, ginger coconut, and aromatic herbs with squab en crochet stuffed with coriander, garlic, parsley, pepper, nutmeg and chopped black truffle served in a table top barbecue (actually, a hookah), finished with a squab and black truffle sauce
1.5 lbs chicken- diced, 1 onion- shredded, 2 cloves garlic, 3t tumeric, 2t red chili powder, 14.5 oz can of diced tomatoes (w/ liquid),2T grated ginger, 3t coriander, 3t cumin, 1/2 cup chopped cilantro, 2T ghee.
This picture does not do justice to their size. They are squashes, but they have very tough skins and if you look below you can see the seeds they look more like pumpkins to me. They are stuffed with chicken & garlic spiced with tumeric, madrass curry, pepper & cinnamon. The squashes were 2.99 Euro for a basket these 4 were about half of them. The largest yellow one is about 1.5 cups in volume. The picture doesn't do justice to how small they are.

After the tumeric is all over the grooms hands feet and face the bride's side of the family comes and washes the feet in a symbolic way to was the tumeric off..
The yellow things on the roof in the distance are skins dyed in the tanneries. We were assured they only use natural dyes, in the case of yellow either saffron or possibly tumeric which is a lt cheaper.
Both curries were made the same--
Onion and garlic sauteed in 2 tbsp oil
Add tumeric, red pepperflakes,
cumin, cardamom, and a little salt to taste
Add potatoes or eggplant (orboth) and cook until tender, add one tomato-chopped with a little soy milk and simmer until thickened.
An anti-inflmmatory root. Taken internally, it is good for your joints and eases swelling. You can put break a root open and rub it topically on itchy bites for a little relief and the fashionable look of jaundice spots dotting your legs!
Eggs dyed with yellow and red onions, red cabbage, beets, tumeric, grape juice, paprika and spinach.

A Meal I made at papaya farms road. Edible hibiscus leaves steamed with a lemon for the wrap, rice cooked in water and coconut cream (made from the coconut meat juiced through a wheat grass juicer), lettuce courtesy of the natural food store in Pahoa, minced Hawaii hot pepper (the red things), minced parsley (smaller darker green pieces in the middle), and cooked Quinoa with curry or tumeric I forget wich (the yellowish grain in the middle).
One of my favourite relishes...a recipe of my mother's....I always feel my mum's presence in my kitchen when making these yummy pickles....if you are interested in the recipe, look here:

It needed a little salt, and I accidentally used too much paprika, but I was quite happy with how it came out otherwise. Maybe a bit spicier than some people can handle though.
