Using the freshest (and therefore tastiest!) ahi tuna, Chef Joseph flavours it with pickled ginger, shallot, lemongrass, salt, pepper and lime juice.

Fantastic first course of tuna tartare at Scossa restaurant, at the Victor Hugo metro stop in Paris.
#tartare & #radish dinner, replete with #duckegg yolks. Heaven. My love is a dreamboat in the kitchen and out!

The steak was scored and sliced rather than ground for better texture. We at this with our hands, grabbing a bit of the steak with the Wood sorel on top. Then dipping the meat in the poweder and the sauce. Very tasty, the sorrel was very flavorful. We had it again in the first dessert!

Notes: This is probably my favorite item on the Lounge menu (it's technically an "appetizer). I miss the olive caramel that came with the Wagyu tartare... it really made the dish extra special.
