I made this great tapioca pudding last night. Whipping the egg whites before adding them to the pudding created a light and fluffy tapioca, and I also used coconut milk to replace most of the milk, and it turned out SO GOOD.

I found recipe online www.chezbettay.com/pages/desserts1/drts_tapioca.htmland changed it a bit -reduce almond milk amount for more thick pudding, and used coconut sugar, and prepared it in improvised double boiler. So easy, and no need to hassle with separating eggs, and adding them slowly. Eggs are just not needed in tapioca pudding -it turns out it is just a myth, like that we need gums in gluten free baking.

Haven't got any info about this farm. When it was built, who has lived here or when it was abandoned, I have no clue. But a very nice location to do it was!!

tapioca pudding - 1/3 cup tapioca (small granules, not large "pearls") , 2 1/2 cups milk, 2 tbsp sugar, one egg. stir continuously while cooking over low heat until it 'sets'

雖然加的料除了黑珍珠之外
蒟蒻很正常
各種口味的珍珠就都很詭異
我選了百香果口味的珍珠
咬下去才知道是某種會爆開的食物
外面有一層膜
裡面全部都是百香果汁液
跟珍珠奶茶一起喝超詭異的啊

You gotta love this heat loving foliage plant. I only wish it were perennial here...
