Stuffed peppers and some crudites plus iced tea and a bit of merlot/cab. Actually one half a stuffed pepper was quite enough,
this was a throw together and it turned out great! I just kept cutting vegis until the balance looked correct!
I also used homemade vegi stock, so the sodium in the attached recipe analysis has to be too high
recipe:http://www.recipezaar.com/329566
ingredients:
* 4 lbs squash
* 1/2 cup brown rice
* 1/2 cup white rice
* 2 zucchini
* 3 carrots
* 1 medium onion
* 4 garlic cloves
* 3 cups vegetable broth
* 1 cup water
* 1/4 cup fresh parsley
* 1/2 lb ground turkey
* 4 ounces mushrooms
* 1 teaspoon olive oil
* 1/2 teaspoon pepper
* 1 roma tomato
* 1 teaspoon ground sage
* 1 cup grated parmesan cheese
Directions
Preheat oven to 400 degrees, cut top off of squash and remove pulp and seeds, place upside down on cookie sheet and fill pan 1/2 way up with water, cover with foil and bake 45 minutes, remove and make sure it is fork tender, if not continue cooking in 10 minute intervals, leave on pan to cool. While it is baking, in rice cooker cook rice with 2 cups vegetable broth, diced zucchini, 1 diced carrot, chopped parsley, and about 1/2 cup water. When rice is done cooking, stir it well and add the raw tomato, pepper and 1/2 of the onion diced. In a Large skillet add olive oil and brown 1/2 of the diced onion with 2 diced carrots when brown add the ground turkey, sage, garlic and mushrooms -- continue cooking until meat is done -- add the rice mixture to the meat mixture and stir well, use the remaining vegetable broth to deglaze pan and get moisture level up for oven baking. Remove about 3/4 of the squash meat and puree for pie or freeze for later use. Fill squash with the rice/meat mixture about 1/2 full then add 1/2 the cheese, then layer remaining rice mixture on top and top it all with the remaining 1/2 cup of cheese. Bake at 350 degrees for about 20 minutes just to get the cheese melted and the flavors melded. Makes a great presentation to the table with the squash full of the meal!
I will be making this again and I suspect it will turn out differently every time!
At any given time Genesis drags in two to twenty or so of her stuffed animals into our room. She plays with them, talks with them, and entertains them as we all sit and talk. This is but one of the many delightful moments you have while grandparenting. I love listening to her and watching her use her imagination while playing.
Thanks Phyllis, you showed me how to make these and about a dozen other Italian specialties from your repertoire. I'll never forget the first time we got talking about food and you said in your very straight forward Brooklyn way " Your Irish what do yo know about food?" Not in a mean way but face it we are a cuisine challenged lot on many levels. You proceeded to show me the wonders and alchemy of garlic, tomatoes, oregano and parsley. Your gone now and sorely missed but a little bit of you is still here in my heart and at the table.
Very smart R470 Topline from this tidy fleet having a new rear tyre fitted at my local ATS workshop!
Part of our Thanksgiving dinner.

Why veganism:
I'm getting my nerd on today, thanks to FGR.
I'm reading Slashdot and fixin' to reply to an article called "Mixed Outcome of Texas Textbook Vote". I must say, the outcome wasn't very mixed at all. If you read the replies to the comments though, you'd realize that mentioning any challenge to the religion called Darwinism is like poking a stick in an anthill.
I also must say, that if you don't read Slashdot—or even know what "slashdot" means—you are NOT a nerd and clearly not a geek. You're just a sorry, pathetic nerd-poser.
Filled with brown rice, black beans, sweet kernel corn, and mushrooms.
Not a very pretty picture, but this was dinner, so there was no natural lighting to be had.
Behind my desk is a cork board that is overflowing with stuff I have bought and collected. My collection of dog tags, badges from conferences, stickers, passes, and an assortment of random stuff.
put stuff on a stick. throw it on a fire. then eat it.
