The weather may not have been great but that did not stop all the surfers make the most of the swell from X Cyclone Marcia. I really needed a bigger zoom lens to catch any of the surfers.
I took this in the '60s with my little Brownie Bullett. Dad had been fishing offshore and he is holding a 27 lb. Red Snapper.
Whole red snapper seared in a sauté pan and finished in the oven. Steamed snap pea, carrot and daikon slaw dressed with Meyer lemon juice slightly thickened with agar agar and topped with sesame seed.
A crispy ginger, garlic, Sichuan pepper corn, and chili oil. Some chopped green onion and Meyer lemon slices as garnish.
Tomyum Snapper, savoy cabbage, basmati rice. No chilli, reduced lime juice and fish sauce so that Isaac could share our dinner.
Next time, I'll only include the zest of the Kaffir lime and not the bitter juice!
Snapper here grow to in excess of 30lbs but the ready availability of smaller specimens make them an ideal choice for plenty of action.
Are they yellowtail snappers? I dunno for sure!
