At the end of mating, the male Snapper Turtle grasps the female and rolls her. Their mating ritual is rather ruthless, starting with the male initially holding the female under the water after a quick fight. Fighting ensues shortly after as well.

After filming this I saw three more. Some Snapping turtles hibernate in this Tamarack Bog. The hole that the first one is in is about 4-6 ft deep! Please excuse the shakey video but if you have ever tried to stand steady in a bog you know what I was going through trying to keep my precarious footing!

Same preparation and treatment as the Lobster. This was an accommodation for a crustacean-allergic diner.

 

Notes: What impressed me the most about this presentation is that the chestnut honey in the poaching medium had infused into the fish (maybe because it was able to permeate the flesh through the fish flake sections?)! The meat of the fish was not only impossibly silky, but it was slightly sweet.

 

Somehow, the candied kumquat and citrus elements struck a finer balance here than it did with my lobster presentation. This snapper presentation was truly outstanding.

Found this snapping turtle in the back yard. It was larger than a dinner plate- and likely more aggressive. Snappers are known to jump and bite if they feel threatened, after which then their jaws lock. It's recommended that observers give them a wide berth unless they want to drag an angry turtle to the emergency room.

Tomyum Snapper, savoy cabbage, basmati rice. No chilli, reduced lime juice and fish sauce so that Isaac could share our dinner.

 

Next time, I'll only include the zest of the Kaffir lime and not the bitter juice!

The New Zealand snapper is not a member of the tropical snapper family, but belongs to the sea bream family. They are an excellent eating fish and are abundant in the north of New Zealand in summer.

I caught this one in Whangaroa Harbour and took the photo just before I hauled it aboard.

Red Snapper is back on stage. Decent gig. But a bit boring too.

Taken during State X New Forms. A festival "that wants to X-plore and X-plain". This years edition took place in Het Paard and De Koorenbeurs in Den Haag. I wrote a report for DJ Broadcast.

The snapper, who's scientific name is Lutjanus quinquelineatus, is one of the few predatory fishes that feed during the twilight hours of dusk and dawn.
