The KBC had a private pig roast recently, by invitation only, for their regulars. Free food and beer; gotta love it.

Awesome Slow Cooker Pot Roast

 

2 (10.75 ounce) cans condensed cream of mushroom soup

1 (1 ounce) package dry onion soup mix

3/4 cup water

5 1/2 pounds bottom round roast

 

In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.

 

Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.

For supper my wife prepared chicken soup and homemade rolls.

This was our Valentine's Day dinner. We put the pork in the slow cooker before work and came home to this! (Well, we had to do about 3 minutes of work to get the pork to this point, but that's pretty easy!)

When I was much younger, one of the more fascinating things about going in old peoples' home was finding 40 year old appliances still in daily use. I can still picture the console radios and iceboxes. I once saw a large chunk of ice being delivered. A memory frozen in time.

 

Now, we have come full circle. Sitting in my kitchen, in full view of anybody who enters, is a Crock-Ette. This was used frequently up until my mother got sick back in '09.

 

I scanned one of the Abbott's lids before. I believe these go back to the late 60's.

I used the slow cooker method -and it has been a success! I even like it better than my thrifted yogurt maker. Here we are eating it with jelly and we love adding granola to it as well. Yea to bacteria!

You can call it cajeta or dulce de leche or arequipe. To me, this is simply caramel heaven in a jar.

 

Cajeta made entirely from scratch by reducing organic goat milk, sugar, cinnamon, salt, baking soda from 2L to 600mL. I had a head start using slow cooker to handle much of the reduction (hands off) before finishing off the last hour of cooking on the stove to achieve thick caramel perfection.

For supper this evening my wife prepared spaghetti and meat sauce with tossed salad. For dessert she made an apple crisp.

Latest addition to my collection of small kitchen appliances. This model is recommended by multiple sources and I bought it when it was on sale for 40% off. I've been cooking with it non-stop since day 1.

Yes, the song got into my head and I had to buy some cider and actually try this out. It's actually very, very good, even though I chose to do a non-alcoholic version which was a blend of allrecipes.com/Recipe/Wassail-Punch/Detail.aspx www.kathyrmiller.com/wassail.htm and www.accidentalhedonist.com/index.php?title=wassail. I added two tablespoons of brown sugar to sweeten it somewhat.

For Christmas Eve dinner, we made the Pizza Puttanesca from Robin Robertson's Fresh from the Vegan Slow Cooker. Both the sauce and crust (so light and airy!) are delicious, though I was a little disappointed to learn that it only serves two. I want leftovers, dammit!

1.5lbs of Pork Tenderloin

3 strips of thick cut bacon cut into 1” pieces

Salt

Pepper

1 tbs dried oregano

1/2 tbs cumin

1 tbs flour

1 onion rough chopped

1 bay leaf

3 carrots cut into 1” pieces

About 3 c of small fingerling potatoes

1 c crimini mushrooms

1 head of garlic, peeled and lightly smashed

3 roma tomatoes cut in 1” pieces

1 jalapeño pepper minced

2 limes juiced

1 c chicken broth

1/2 cup of dry white wine

 

Sauce

1 tbs butter

Fresh parsley and thyme

1 lime if needed

 

Season tenderloin with salt and pepper and herbs (except bay leaf). Sprinkle with a bit of flour and set aside.

 

In a heavy pan, cook bacon until crisp. Move bacon to a spare plate and cover and store for garnish.

 

In same pan, brown all sides of the tenderloin. Move meat back to plate. Saute onions in same pan.

 

If your pan is the insert from your slow cooker, you can place all the remaining ingredients in the pot and put the meat on top. Otherwise, deglaze pan with wine and pour into base of slow cooker. Place remaining ingredients in cooker and put the meat on top.

 

Set the cooker for low and allow to cook for 9 hours.

 

Move meat to broiler safe pan, sprinkle bacon around it and place under broiler for about 5 minutes to get a nice crust and warm the bacon.

 

At the same time, move veggies to serving bowl, and move all remaining liquid into a sauce pan. Add butter and cook until reduced by about half. Taste and add more lime juice if desired. Season as needed with salt and pepper. No need to strain the sauce.

 

Cut meat across the grain, as much as possible, plate and drizzle with sauce and serve alongside veggies. Garnish with fresh herbs rough chopped.

Really love the packaged version of this so I've been experimenting with homemade versions to see how close I can get. Getting there. In the meantime the experiments are pretty tasty.

God prepares leaders in a slow-cooker, not in a microwave oven. More important than the awaited goal is the work God does in us while we wait.

Waiting deepens and matures us, levels our perspective, and broadens our understanding. Tests of time determine whether we can endure seasons of seemingly unfruitful preparations, and indicate whether we can recognize and seize the opportunities that come our way.

Made chicken using Lemony Herbed Drumsticks slowcooker recipe: added 2 tablespoons honey and 2 chopped red peppers and 1 option (sauté peppers and onion before adding to crockpot) very good. Cooked in under 5 hours on low. Pomegranate sauce was VERY GOOD with it.

Pomegranate Sauce

I have a pomegranate tree and so have no problem for a good supply in autumn. You can, however, substitute any unsweetened dark juice for this such as cranberry, cranberry-apple, current, grape or even prune. In the case of the latter two, add a few softened in cognac (or brandy) raisins or very finely chopped apple and allow to simmer a few minutes. This is wonderful in autumn with Roast Pork Tenderloin and Autumn Vegetables. A fine sauce for chicken or Cornish hen as well.

 

250 ml. pomegranate juice

1 T. mild honey

1/2 t. minced fresh rosemary

1/2 sm. garlic clove

1 T. sherry vinegar

1 t. cornstarch

herb salt

 

Add the rosemary to the juice and simmer to reduce to 100 to 125 ml. (less than half to half - depends on flavour intensity of juice) add the honey and garlic and gently simmer for a few minutes.

 

Remove the garlic, add the vinegar and a pinch of herb salt.

Make a paste of the cornstarch with a little water, stir into the sauce and allow to thicken.

Chili! First meal in my slow cooker.
