One great part of experiencing spring in Japan is the atmosphere in areas such as Arashiyama. Not only are there cherry blossoms festivals to attend, but the rivers and alleys are lined with food carts full of intersting fare. Being from Minnesota, I can say that nothing beats food on a stick.

I had a BBQ this past weekend where I hosted 9 of my friends. I tried making this new recipe, North Moroccan Chicken, which I found in a magazine earlier in the weekend. To my dismay, it turned out rather bland and dry. The reason? Because of its thickness, the marinade didn't seem to penetrate inside the chicken. It simply stuck to the outside of the breast even though I had marinated it for 3 hours prior. The driness could have come because I may have over cooked it in fear of not cooking it enough.
Nonetheless, I thought my Spanish Salsa accompaniment turned out rather well. It's a mix of papayas, mangos, roma tomatoes, and red onions in a honey glazed sauce.
The veggie skewers of green and red peppers, mushrooms, zuchinis, onions and tomatoes finished off this plate.
I had also made some potato salad, which I was unfortunately unable to have since it ran out before I could get some myself. I thought the sangria turned out quite well as well as the flavours all mixed in oh so well. Making it a day in advance really does help!
It was a great relaxing weekend as the hot weather called for some good wholesome BBQing.

Ingredients
* 1 pound chicken breast fillets
* 2 tablespoons lemon juice
* 2 tablespoons honey
* 2 teaspoons sesame seeds
* 1 teaspoon grated ginger
* 8 wooden skewers, soaked in cold water
Instructions
1. Preheat your indoor grill to medium high heat. Or you can use a grill pan on your gas or electric range on medium high. Of course, charcoal or gas grills are fine, too.
2. Slice chicken into thin strips and thread onto 8 soaked skewers.
3. Place skewers on grill or pan and cook for 3 minutes or until cooked through.
4. While chicken is cooking, combine lemon juice, honey, sesame, and ginger.
5. Dip the skewers into the lemon-honey mixture, or pour it directly over them.

This was probably some of the best food I've eaten my entire time living in Asia. Basically you're given a plastic container and you just use tongs to pick out whatever you want the men to grill. The scallops, okra and salmon were probably my favorite, but the weirdest tasty treat here was frog. It's a boring way to describe it, but frog does taste a lot like chicken with a similar texture.
My sister made these skewers with fruit on them. Good idea I guess. No forks, no fingers, no mess. It was a combination of melon, pineapple, grapes, and strawberries.
