A school chef’s work is never done, for when classrooms temporarily shutter for the summer, these creative, dedicated masters of the kitchen come together from all over the state to sharpen their skills, share a banquet of delectable recipes and ideas, learn what’s cooking in their profession, and plan a fresh culinary journey for the students they help nourish.
This summer, consultants from the Iowa Department of Education Bureau of Nutrition and Health Services are conducting regional training for school nutrition staff across the state. Led by consultant and certified chef Brenda Windmuller, participants have access to on-site professional training along with numerous training videos ranging in topics from standardized recipes to knife skills to measuring to yield tests.
In an effort to promote scratch cooking in schools and locally grown foods through the Team Nutrition grant, culinary classes were offered in five different locations – Council Bluffs, Fairfield, Clear Lake, Johnston and Spencer.
Each class centered around the 12 winning recipes from a culinary competition among Iowa Students that featured local foods. Each culinary class had the opportunity to prepare and sample all 12 recipes, learn how to implement each of them at their local level and apply for subgrants to assist with the implementation costs. Classes also included helpful culinary lessons, group discussions, handouts and other resources
The next few days cover the building of my home office. Today, I had someone round to lay a concrete base on the concrete that was already there, but sloping at a steep angle. The shuttering is completely level on top, ready for the concrete tomorrow...
