I occasionally make pizza at home, but it’s usually in the form of a pie baked at 550˚F on a preheated pizza stone for 8-10 minutes. Most of the time, it’s a simple Margherita pie (tomato/cheese/basil) which is about 10-inches in diameter and good for two. When I make the homemade dough, it’s enough for two pies. I keep the second dough in the reefer and make another one for dinner several days later. This satisfies my pizza urge for a month or two.

 

Today, I decided to try something new (for me). I took the same dough which usually makes two round pizzas and used it to make a single pizza in a pan. This is the way my mom made them in the 1960’s and 70s. This was my first time using a sheet pan. There is currently a small craze in Seattle fawning over Detroit-style pizza. I think it’s basically a sheet pan pizza.

 

The dough I make follows a recipe I’ve used the past dozen years. It came from the New York Times. You can still find the recipe on the NYT’s site. I’ve modified its preparation slightly but the ingredients and measures remain the same. It makes a terrific dough.

 

I was a little worried this dough might stick to the sheet pan. But, after baking at 450ËšF for 25 minutes, the pizza came out great. It shrunk and little bit back from the edges of the pan, which actually made it easier to get out of the pan. I lifted the whole pizza out with a thin fish spatula and a pair of tongs. It released easily. And it was easier to cut it on a flat cutting board. This pizza, as made and cut, was plenty good for four adults or four meals.

 

Tonight, after dinner, I stepped outside to close the front gate. It’s been dark and very wet in Seattle. A storm originating near Hawaii is blowing in from the Pacific. The balmy wind felt good after a cold February. The stars were out and a continuous line of jets were arriving over the Cascades Range. I watched them for a while.

 

I went back inside. It had been several hours since I pulled the pie out of the oven, but it still smelled like the House of Pizza inside. A good smell on the late winter night.
