yep. I was in the kitchen again! haha Tonight we are having shredded beef enchiladas made with whole wheat tortillas. I wanted to pair it with a salad, but what dressing goes with mexican?

I didn't want it to be too heavy, so after some research and a look about the kitchen I came up with this one. It was surprisingly light and refreshing! I'd love to share it with you:

Light and Refreshing Viniagrette

put this in a mason jar:

half bunch of finely chopped cilantro

1 green onion, sliced fine on the bias

1 T. minced garlic

Salt and pepper

Add:

1:3 ratio of

banana pepper brine with a splash of fresh lemon juice

extra virgin olive oil

Shake and chill for a bit to allow flavors to marry.

Finally I see the true colors

Swimming at the main beach at Grey - as close to heaven on earth as you can get on a hot day.

Getting a drink. Playing outside is thirsty work

Mahua Waterfall located in Tambunan, which is approximate 1.5 hours drive or 80km from Kota Kinabalu. A great destination for day trip to refresh your mind with ice cold water.

Emerging from the winter sea after a lengthy dawn swim in foggy Wellington Harbour.

After a morning of walking around Tintagel, we settled in this pub. A refreshing Cornish pint and pasty was to be had. Delicious! And it was dog friendly. :)

...being 30 weeks along in my pregnancy I am only limited to a strawberry lemonade - although it was very good!

Man.. in that heat, the watermelon slices were like elixir!!

Smoky Mountain Waterfall

After each kid who wanted to ride the elephants had an oppurtunity, everyone was looking forward to freshening up and having a sip of water before lunch. Some were alittle bit too anxious it appears :)

Day Five of a few days away in East Anglia.

Our last day. We spent the morning wandering around Cambridge before driving back.

Today was the Open Day for all the various colleges associated with Cambridge University. The city was bustling. It was so refreshing to see people smiling, having fun, and looking to the future.

We walked around the town, and down to the river, where people were punting.
