Same as the next picture, but processed differently. This is an HDR image that is made from one RAW shot. The other similar HDR image was made from three different shots taken at different exposures.
I've been living on this salad lately and have felt so energized and satisfied each time I have a bowl. It seems to have the right balance of sweetness and crunchiness and energy.
2 cobs of corn
1 sweet red and/or yellow bell pepper
1/2 of a red onion
1 large stick celery
handful of fresh parsley
Slice the kernels off the corn cobs, finely dice red onion and celery, dice peppers and chop celery and parsley and toss it all together in a pretty bowl (or in my case, a glass Pyrex to-go container because this batch went to a vegetarian potluck this weekend).
One thing I'm loving about learning more about eating "raw" or "living" foods is that they are so often so easy to prepare, minimal dishes, and of course, no cooking! This salad is so great, even without a dressing. You could add an avocado dressing or just chop in some avocado for a little richness and healthy fats.
Here's a photograph I took while on a South Beach, Miami family vacation back in January, 2015. It happened to be Art Deco Weekend and Ocean Drive was lined with Artist Booths. This artist's name is FLEETWOOD COVINGTON. Very cool guy and I really enjoyed his work and style. His portraits in my photograph are actually oils on salvaged, weathered, rusted METAL.

WWE landed in Baltimore for a Special night of RAW
