Sausage and mushrooms with alfredo sauce over four cheese raviolis. It was alright, except the ravioli kind of got lost in flavorfulness of the rest.

It was meant to be a crocodile, but with a tongue he kinda looks like a frog now...

Anyway, a friend for lunch in today's Happy Little Bento!

MisterMan gets chicken and sun-dried tomato ravioli, with purple & maroon carrot skewer, Okinawan sweet potato stars ( I got them tie-dyed!), yellow cauliflower, romanesco, peapods, cherry tomato. Oh, and today's jack o'lantern is a sweet potato ~ I know, he has a lop-sided smile... that uh, adds to his character?

 

Fruits, kind of sad and lacking, include bland pluot, golden raspberries (under) and blackberries. I miss summer!

Handmade spinach and goats cheese ravioli with a light creamy tomato sauce. This is my first attempt at ravioli and though it may not look great it tasted fantastic.

I seldom get to taste authentic Italian cuisine so at the D' Italiane Kitchen restaurant, I wasted no time in ordering a plate of delectable beef ravioli. :o)

Ravioli di melanzane

2 melanzane grandi

Basilico

Origano

Pinoli

Mandorle

Mollica di pane ( 2-3 fette di pancarre' vanno benissimo)

Olio EVO

Sale/pepe

Passata di pomodoro

Sale/pepe

 

Lavate e tagliate le melanzane a meta' per il lungo.

Ungetele di olio e infornatele posizionate su una placca da forno per circa 40/45 minuti a 200°

Una volta cotte, levatele dal forno e recuperate con l'aiuto di un cucchiaio tutta la polpa.

Nel caso fosse un po' troppo acquosa, lasciatela sgocciolare dopo averla salata, all'interno di un colino.

Quando e' ben sgocciolata e fredda, passatela al mixer con un cucchiaio di olio, qualche foglia di basilico,una presa di origano, pinoli e mandorle( una manciata) un paio di fette di pancarre' o altra mollica migliore. Regolate di sale e pepe e amalgamate il tutto aggiungendo , nel caso l'impasto fosse un poco lento, del pangrattato fino ad ottenere la giusta consistenza per la farcitura dei ravioli.

Con questa farcia, formate dei ravioli nel formato che piu' vi aggrada e, dopo averli cotti per pochi minuti in acqua salata in leggera sobbollizione, spadellateli con un sughino semplice fatto con della passata di pomodoro ( nel mio caso home made ) a cui avrete unito qualche cucchiaio di un similpesto preparato frullando qualche foglia di basilico, pinoli, mandorle e del buon olio.

Unser erster Versuch Ravioli selbst zu machen. Für den Teig habe ich mir Mehl und Hartweizengriess von Gustini.de schicken lassen und das Rezept von einer einer italienischen Rezepteseite genommen.

Gefüllt sind die runden Ravioli mit einer Hackfleisch (cavallo um ehrlich zu sein) und Pecorino Füllung. Die eckigen Ravioli bekommen eine Steinpilz-Ricotta-Füllung. Extrem lecker. Nur den Teig sollten wir noch ein bischen dünner rollen.

Quick and easy dish for those days you are in a hurry, yet delicious!

Your favorite spaghetti sauce , canned or home made.

You favorite Ravioli frozen or homemade.

Mozzarella cheese.

Layer all the ingredients (cook ravioli first if using frozen ) top with more cheese and bake at 350 till hot and bubbly!

Delicious with warm crusty french bread!

Ravioli con ripieno di gamberi, ricotta, prezzemolo e bottarga. Sugo con pomodorini, calamari e gamberi; Guarnizione di zucchine croccanti

 

One of the vendors at the winter farmer's market had fresh mushroom ravioli yesterday. This is probably one of my very favorite foods, when prepared the way I like it. And of course the only way to do that properly is to do it myself at home!

 

1 lb fresh mushroom ravioli (cooked - it only takes a couple of minutes in boiling water)

1 cup heavy cream

1/2 cup grated FRESH parmesan cheese

dash nutmeg

dash salt

dash freshly ground pepper

1/2 cup chopped fresh basil (thank you aerogarden)

2 tbl butter

2 tbl flour

 

1. Melt butter, add flour and stir to make a roux

2. Add cream

3. Add cheese, salt pepper and nutmeg.

4. Stir until melted

5. Add milk if necessary to thin sauce

 

Pour over cooked mushroom ravioli in baking dish, put in 350 degree oven to brown. I think I actually broiled it a couple of minutes.

 

Oh, notice my fabulous new corningware 42 oz. au gratin dish - I've been waiting for this to go on sale at Marsh, and by golly it did - just in time for baked ravioli.

Homemade spinach ravioli stuffed with pumpkin, green peas, sweet potato, served over vegan cheese gravy. Roasted Brussels sprouts, beets and red pepper Gramolata.

 

Was plated so nicely. Bummer I didn't get a clear shot. It was just dancing so fast around the table.
