The beast returns, this time we used left over Mexican braised pork, added our parent's barbecue sauce, and threw it on a fresh roll.

as with nachos, potato salad just isn't my thing. apparently, i have been eating the wrong potato salad, 'cause this was dee-lish.

William made these gigantic sandwiches. The one on the left is a Cubano (mayo, pulled pork, ham, pickles -- missing mustard cause he forgot). The other is a bbq pork sandwich with mayo and pickles. Football Sunday is not Football Sunday without food that makes you want to pass out.

The 7 lb roast yielded a large bowl of shredded meat. The shredding was done by hand. We wore latex gloves, which we bought specifically for this purpose. Now I have a box of 46 latex gloves, which is weird.

Kansas City ribs, Spicy pulled pork, Roast corn salad, Nectarine Cherry tomato salad, Asian-style potato salad mash.

Picnic roast of pork braising for our pulled pork sandwiches. We're letting this braise and soak in special sauce overnight.

Wow, did this ever turn out well. The next step is to do this on a grill, but that'll have to wait until I own a gas grill, because I doubt I have the patience to monitor a charcoal fire at low heat for six hours.

These Cherry Coke Pulled Pork Sandwiches are crazy good. I think this is one of my best creations to date. The spiciness of the pork, with the sweetness of the Cherry Coke based barbecue sauce and the creamy goodness and crunch of the cole slaw makes an amazing combination.

The smaller one hit 190°F at 8.25 hours and was super tender. Stuck a fork in it, twisted it easily 180°. Done.

 

The bigger one needed another 30 minutes.
