I used yellow mustard the night before as a base prior to putting on the rub. This was only a 4 lb. butt. I was clueless as to how long it would take to smoke. One source said to expect 1.5 hrs. per pound. However, I was somewhat doubtful of this as a general rule of thumb, since the connective tissues still had to break down, and that just takes a long time.
We mixed the meat with BBQ sauce and served it on a bun. The scoops of potato salad and cole slaw are mandatory, I think.

For this project we used Fearless All Beef Franks from Niman Ranch, a Wegmans Club Roll, Wegmans Pulled Pork and Memphis style BBQ Sauce, and “store bought” Cole Slaw

Fusion dinner last night... Korean Pulled Pork Taco's with Pickled Cabbage and Onions with Pico de Gallo and homemade refried beans. This one is definitely a keeper! Recipe from 'Korean Food Made Simple' by Judy Joo. Recipe is also on line as part of her Disco Fries recipe. We used a slow cooker instead of the oven, 4+hrs for the Pork Collar we used for perfectly tender pork.

Pretty good, but one of six wings and one of three sides were missing, and the waitress was too "swamped" to be interested in serving us.
2 Sauteed Soft Shell Crabs over house cured Country Ham, Grilled Tomato, Cheesy Grits, topped with Aoili and Arugula. A little salty, but otherwise simply marvelous!
