Q39 is a competition BBQ joint in KC. In my humble opinion, this is the best BBQ in the city (although the burnt ends at Joe's are the best). I would particularly recommend the ribs as they are the finest Ive ever had.

Had the pulled pork BBQ sandwich and the homemade onion rings. Both were excellent! This place is in Waverly, VA on State Route 460.

Recently I've been working on a project with Adrian Chalifour of Towers & Trees for Music BC's Songwriter Workshop during VIC Fest this June 14th, 2014. We head out with an established musician taking part in the Songwriter's Workshop with another performer from VIC Fest to a food vendor from the festival for food and conversation.
The first was Peter Gardner of Hawk & Steel and Aidan Knight at Pig BBQ Joint here in Victoria.
For National BBQ Day in 2018, Firefly's BBQ Restaurant provided free lunch for first responders and also hosted a lunch and an evening party for anyone who loves authentic BBQ.
Cooked through the night (~9 hrs) on Kamado Joe at 225o F until internal temperature of meat hit 195oF. DigiQ II kept my oven on constant temperature all night, didn't have to adjust it once. Used Apple Wood Smoke + underneat sat a tray of apple juice
daikon, red peppers and smoked pineapple puree
A spin off of the popular crab cake with a richer meat component, that was equally loose, a tad richer, and shielded by a thick panko crust. I liked how the Asian flavoured slaw helped cut through the off menu starter. Again, Barque's feature light smoke, which translates to a very subtle presence here.
Pairing: Hoffman Simon Riesling, Spatlese, Mosel, Germany
The best part was definitely the cracklin. I still prefer western NC pulled pork, but I'm glad I tried the Scottish style. I am guessing that the Scots were pulling apart pigs long before we were and we just gave it out own spins in the states.
