Chocolate pudding with peanut butter granola.
I have a Vitamix so I left the skins on the baked sweet potatoes and turned it to soup mode.
Creamy & luscious...
Easy Chocolate Pudding
4-6 servings
2 cups cooked sweet potatoes
1 1/4 cups unsweetened plant milk
1/2 cups unsweetened cocoa powder
4-6 pitted dates
Blend all ingredients together in a high speed blender until smooth
Chill in refrigerator for a least 1 hour

Swedish Rice Pudding... veganized...
Our homeschool geography club was studying Sweden this month, and this is what we came up with to bring to the potluck luncheon. I don't know the exact amounts, but the ingredients were as follows:
organic brown rice (about 3 cups cooked)
organic brown sugar (about 1/2 cup)
okara (soybean pasted leftover from making soymilk - about 1 cup)
rice milk (about 3 cups)
unrefined coconut oil (approx 2 tbs)
apples (3 large)
arrowroot powder (1 tbsp)
cinnamon & nutmeg (2 tbsp)
I put all the ingredients, except the apples and the rice, into a pot and brough to a boil for a couple minutes to cook the beany taste out of the okara... Then I added the rice and apples and reduced heat to simmer for about a half hour, so the apples could soften up a bit... They were still rather crunchy at the end, which I actually liked, but I could have put the apples in the liquid before adding the rice and cooked them down more beforehand.
This turned out really creamy and yummy. I hope I can reproduce it!
Rice pudding is called risgrynsgröt in Swedish. Seb finds it hard to pronounce...

A tray of yorkshire puddings straight out of the oven, made to a slightly modified traditional British recipe. These came out a little flat for some reason this time, maybe the oven was too hot. My first attempt at Rice Pudding. Initial taste tests indicate success. This was also my first use of a whole vanilla bean. They smell amazing.
I really must get better at taking pictures of food. Any suggestions Simi?
