I had made these vegan chocolate chip cookies the other day...well, I made them into a cookie cake instead of just normal cookies and it just didn't work out too well. they tasted ok, but they weren't great and they definitely weren't good enough to share with anyone (too oily, of all things). So I threw the whole thing into the food processor with a little brown sugar and tapioca flower and pulsed until I had crumbs.
Then I pressed it into a pie pan and baked on 350 for 10minutes.
This morning I figured out what I can do with the pie crust! Pudding!!!
2 packages of sugar free pudding: the bottom layer is white chocolate pudding and the top is chocolate. The cookie crust is made with a bunch of almond flower so it's kind of nutty. it is so delicious I could just eat the whole thing, but that'd be bad...
My mum's pudding almost never turns out as well-shaped as this; but it always tastes fantastic (it also contains no dried peel, because of my great(-great?)-grandfather).

i made a bread pudding with sweet bread i found in the freezer! i added dark chocolate chips as well. turned out good.

We've been very social this weekend - friends over for sunday lunch today, (different) friends over for dinner last night. Roast chicken and veg from the allotment this lunchtime, and homemade bread and butter pudding for dessert. Went down well with the men!
Here's a basic recipe for pudding:
2 cups of milk
3 tablespoons of cornstarch OR 6 tablespoons of all-purpose flour
1/2 cup of sugar (more or less)
1 tablespoon of vanilla extract, if that's what you're making, or whatever other ingredient + more/less sugar.
Steps: Get a pot, put everything in the pot, stir it on medium heat (5-6) till it thickens to how you like it. You should dissolve the flour/cornstarch slowly in the milk so it's not clumpy, and note that the pudding gets denser when it cools.
Also note to eat it when it's cooler, because this feels as bad as out-of-the-oven bread in your stomach.
I put maple syrup and honey in this instead because I don't like sugar. Problem with these seems to be they sink to the bottom, caramelize a bit, and make a burnt, futile mess on the bottom of the pot. Honey does work better, though.
I also put walnuts in this. I like walnuts..
