I began Phase I of “Operation American Pub/Tavern Pickled Red Sausage” today. I’m not going to make the mistake I made a few days ago by adding the red food colouring to the brine and winding up with a dark red brine. No, Sir! Never again. Not on my watch!
I cut some skinless sausage up today so it will make it easier to stuff them into the jars. I then covered them with fresh water and added copious quantities of red food grade dye. I shall allow the dye to penetrate overnight and then rinse them thoroughly before I stuff them into jars and add spicy brine and sliced peppers and onions. This way, the brine will be clear and only the sausage will be red.
Some people say that Americans are crazy for eating pickled red sausages in our pubs and taverns. Well, we colonists didn’t fight the British Army at the Battle of Monmouth, New Jersey (about 18 miles from my home) or defeat the English at the Battle of Trenton (~50 miles from me) after General Washington crossed the Delaware on Christmas Eve to be told by the English that we Americans can’t eat pickled red sausage! :-)
All around the towns where I live, there are historical markers that identify what is called, “British Army Retreat Route” to mark the roads they took when they were running from the Colonials with their tails betwixt their legs back to New York Harbour. I smile whenever I see one of those many signs and think to myself, “I bet the English Army didn’t have any of our tavern pickled red sausages when they were running back to General Lord Charles Cornwallis in New York Harbour. :-)

This morning some of the power-points were not working and some others were.. We have three meters (because we have 3 phase power) and one of them was not working. A first inspection by Ausgrid showed a loose connection at the junction pole where we receive power from the grid. As they are not allowed to climb ladders any longer (O.H. &S) a cherry picker arrived. The wire was reconnected and we were back in business.
This fresco is an order from CGSP to cover up the illegal graffitis that seemed to always come back when removed.
It is a city skyline with flashy red characters symbolizing the free expression of the people.
The artist David Donceel alias Phase is one of the first street artist in Belgium since he’s practicing his art from 1986. He describe himself has “an oldschool graffitiwriter from Ghent”. After some trouble with justice, he decided to go legal with his work.
