Carefully keeping the sugar paste in the mold with one finger, slide the sharp knife over the top of the mold, keeping the knife touching the mold as you scrape the paste off.

The buffet offered an assortment of dishes, mainly from the predominant Burmese style (of which the country was named after during colonial times), and is probably the best way to sample a little bit of everything!
A very salty fermented bean paste. As with most fermented bean paste, the rush of saltiness is finished off with a slight sweet aftertaste. Goes well with a bowl of steamed rice.
The soup pictured here was supposed to be topped with ancho chile paste, but I had no anchos at the time so had to wing it. Friend Harol (of the soup recipe) sent me some ancho chiles in the same package with the calamondins (What a gal!), so today I'm having the same soup with the topping intended.
To make ancho chile paste: Simmer 1 seeded ancho chile in 1 C. water until tender (about 10 min); remove all but 2 T. water and blend.
Use this paste to cook rendang (beef cooked with coconut milk and aromatic spices). It's almost like curry but thicker in consistency. You can find this paste at your local asian grocery (eg. Ranch market or Lion Market).

my husbands grandparents owned our little piece of land nearly 100 years ago. they planted a few fruit trees including 5 quince trees so this year i decided to try some quince paste. dont think i got the paste bit right more like jam but really yummy
