Now that we all had a chance to relax for a couple of postings, kick back, put up our feet and enjoy some birds in their posing positions, let’s dive right back into the high octane charged world of flight action and observe the Chickadee trying to catch up to her buddy the Nuthatch as he’s trying to hit that wormhole on his way back down south. Will she catch him? Not likely. Two separate portal openings will occur, annoying the heck out of my California friends although it should not be that bad this time around because sound baffles have been installed in an effort to keep the cross border peace. I find myself in an awkward position here, trying to accommodate the natural inclinations of the yard wildlife and at the same time balancing that with the needs of my neighbors for peace and quiet. Someone kindly observed that my potato dish ( flic.kr/p/2qUY3kS ) was like dauphinoise potato but without the cream. And so, 'fauxphinoise potato' is born!

WEll, here's a portion that I re-heated with some smoked bacon and sliced tomato. The brown splodge is A1 Sauce.

 

Brown sauce is very popular in northern England and Scotland. It is only marketing that has made HP Sauce the market leader (invented in 1899 in Nottingham) whereas the infinitely more palatable A1 Sauce was invented in 1824 by William Brand, chef to King George IV (who knew his food!).

 

HP Sauce gets its distinctive tang from tamarind paste; A1 sauce has orange puree, among other things. I was lucky enough to procure a bottle yesterday. Huzzah!

These "Monsters" of the back country.will get to almost 7 feet at the shoulder and weigh up to 1500 lbs.Shedding the last of the velvet before the rut I observed this handsome fellow from a safe distance while he and his troupe wandered around Lake Mitchell in the Indian Peaks Wilderness. When one gets close to these spectacular creatures you realize the power of mother nature and suddenly recognize some of our limitations and the special obligation to preserve the environment they require

These majestic waterfalls are one of the main attractions of the southern region in Costa Rica, not only for their natural scenic beauty, which offers the tourist moments of recreation and fun, but also to participate in different activities such as horseback riding tours, swimming, climbing, jumping and to observe much of the beauty of the tropical rain forest, among others
