Due to the effect of El Nino driven shortage of rainfall, Tigray Region has been affected by severe shortage of drinking water for both people and livestock. The effect was manifested through declining of groundwater levels, drying of water wells and increased malfunctioning of water supply schemes. This alcohol optional lift is nutritious & delicious as a chocolate cocktail or can be heated as a comforting hot chocolate toddy for cold winter nights by the fire.
1 cup water
1/2 cup hazelnuts
2 Tbsp. Cacao Powder
2 Tbsp. Agave Nectar (I use less)
½ tsp. Raw Vanilla Powder or 1 tsp. Vanilla Extract
1 Tbsp Grated Cacao Butter
Pinch of Salt
1 tbsp Raw Cacao Nibs
1 oz. Organic Vodka (optional)
small nibs for garnish
In a high speed blender, mix water and the soaked hazelnuts until smooth, strain to make a thick milky cream. You can add a bit more water if it’s too thick. Add the cacao powder, agave nectar, vanilla, cacao butter, salt and vodka, if using, and blend again until well incorporated.
Serving options:
Pour into a cocktail shaker, shaking with ice, serving in a martini glass with nibs for garnish. Or gently heat in a sauce pan on low until nicely warmed.

A spectrum of waste materials can be digested by composting worms, who tunnel their way through, as they transform it into food for plants, which eventually becomes food for us.
The worm castings - hanging from the wood mesh in this sculpture - were hand-formed into the shapes of worms. They are made of worm waste sourced from the bottom of my home worm bins and mixed with a binding agent to create a clay-like material. I feed my worm colony waste food, paper, dead plants, coffee grounds, lint, rabbit manure and fur. I feed the worm castings to my garden plants. When I am eating a tomato from my garden I digest the distinction between waste and food.
From the perspective of a plant, the worm castings in this sculpture a are nutritious, edible food. From the perspective of a worm, the everything else in this sculpture is edible.

KIWASH in partnership with county nutrition and health departments are working to promote consumption of nutritious dense and diverse foods as well as improve food security at household level.
In November 2016, KIWASH supported the establishment of an agribusiness demonstration farm at the Jaramogi Oginga Odinga Teaching and Referral Hospital to display various kitchen gardening technologies such as multi-storey gardens, keyhole gardens, moist and raised bed gardening, hanging gardens and recycled tire gardens. The farm is managed by Hope for Kisumu Youth Achievers Group, a support group for people living positively with HIV.
During a visit to the farm in March, the Chief Officer of Health Kisumu County Ojwang Lusi appreciated the importance of the demonstration farm where pregnant women and mothers attending the Maternal and Child Health (MCH) clinic at the health facility visit and learn simple gardening technologies to help them grow various nutritious foods at the households.
“Through our partnership with USAID, we’ve made a lot of progress in improving water supply, hygiene and sanitation, and nutrition among poor urban and rural households in the county,” said Ojwang Lusi.
The chief officer distributed hygiene kits to 100 pregnant women and mothers who’ve been sensitized by KIWASH on household water treatment, handwashing, benefits of kitchen gardening and recommended diet diversification practices.

A nutritious dinner feast! Me and my parents ate dinner at the new Olive Garden they put up by Eastridge Mall in San Jose, CA. There were lots of people, even when we went at an odd time, like around 3:30 p.m., so it must be good food! I got the Chicken Alfredo Calzone with a blackberry blood orange iced tea for my drink. We also had salads and soups for appetizers. The soup was a minestrone soup. The bread sticks were delicious as well. Yum yum, a good and healthy dinner this early evening!! Yuba has long been acknowledged as one of the most nutritious foods of the Orient.
When soymilk is gently heated in shallow, open pans at 80-90*C, a cream-yellow, bland-flavored, concentrated protein-lipid surface film (called yuba) gradually forms. The films are successively removed from the soymilk surface using a long skewer, hung to air dry, and marked as fresh or dried sheets, sticks, or chips, or made into a variety of meatlike textured protein products
When you make tofu at home you manage to get one yuba skin. It is delicious.

8 August 2019, Njoben, Central River Region in The Gambia. Farmer, Mariama Surr, 55 years old, stands for a portrait holding mint grown in the garden where she is one of the veretan farmers. She explained how her work here for the past 14 years has generated an important income for her because it allows her to send her children to school and buy the materials they need for their studies. Furthemermore she can now cook them more nutritious meals using all the varieties grown in the garden. The FAO has been helping to expand the Farmer Field School in Njoben (Central River Region -CRR) since 2014, with funding from the EU. The field has been extended from one hectare to five hectares. Today, the various crops grown here: tomatoes, orange fleshed sweet potato, herbs, peppers, cassava, cabbage, okra, rice and many other nutritious foods are grown and consumed by more than 200 women and 14 men, and their families, from the local community. The surplus is sold, and this allows many of the families to improve their livelihoods and send their children to school. Another noteworthy improvement is the comprehensive borehole and water distribution system that has been established, thereby relieving almost 500 women farmers from the hardship of drawing water from the wells.
The community has been trained on gardening and helped agricultural extension workers to introduce more varieties of vegetables and apply climate smart agriculture. Similar support has been expanded to seven other community gardens throughout the country. This component is part of the “Post-crisis response to food and nutritious insecurity in The Gambia” (Project code: GM/FED/38780)

It's Meatless Monday again! Here's an easy and nutritious lunch.
Start with a bag of kale slaw. (I don't particularly like kale but I have become "addicted" to this veggie mix.)..Toss it with some seasoned rice vinegar. Be sure it says "seasoned" as it has a bit of sweetness to it, and can be found in the Asian section of your supermarket. If desired, you can add a drizzle of olive oil. Add some chopped apples and sliced scallions. If you like cilantro... add a bit of that too. Serve topped with a scoop of cottage cheese that has been mixed with some pineapple tidbits. Enjoy a toasted bagel or some cheese and crackers on the side and you have a meal!
