Not just any meatloaf - "Super Porktastic Bacon-Topped Spinach and Mushroom Meatloaf." Recipe from Nom Nom Paleo. I used a 10 inch loaf pan because that's what I have; the bacon would have covered the meatloaf better in a 9-inch one, but c'est la vie. The bacon is Applegate Farms; the ground meat is a beef/pork mixture from Fleisher's.

Amazing sandwich.
Minty with a touch of sweetness, hint of curry, and the lamb meatloaf is very tender and flavorful.

All homemade and delicious. Lentil soup too. Finished off with a slice of boston creme pie (shared with the others).
I was talked into ordering this by the waitress in the Paradise Cafe, largely on the basis of never having had meatloaf except in a South African boarding school. It came with garlic mashed potatoes, bread, slightly undercooked broccoli and a really spicy tomato sauce.
Meatloaf is something I haven't quite found a really good recipe for ... yet. But this was very close.
I made Chicken Meatloaf with Kale, Parsley and Basil from the garden. I also added shredded Zucchini and Onions to keep it moist.
The usually meatloaf that we like a lot. I also added some asparagus on the side. I have always wanted to hand make perogies so I finally did. It is pastry dough, with potatoe and cheese inside. After the dough is stuffed you boil it for a few minutes and then put them in the fridge. Right before cooking, put a little oil in a pan and sautee them. They turned out great.
