Chicken with bacon, thyme and roasted pears + mashed red potatoes with goat cheese and caramelized onions with balsamic vinegar.
It was about midnight or later (Georgia time) when we were enjoying a delicious meal of prime rib, mashed potatoes, and gravy, but it had been a long day. We were all happy to have arrived in Las Vegas. Day 1 was a great success!

I had two small pork loins and figured they would dry out if I cooked them separately, so I wrapped the two loins together with bacon and tied it up before placing in the oven. Served it with garlic mashed potatoes that had some heavy cream and sour cream in it, and some roasted asparagus that I topped with some parmigiano-reggiano.
Family dinner time!
Scott arrived today, and I made a whirlwind trip to pick him up at the airport. Then we had to help Justin with his car and spent hours waiting for AAA twice and standing on the side of a road. I decided that it wasn't worthy of a photograph.
But family dinner always means we're all together. And that's something special.
Even if it is chicken. (It was pretty good, even though I've decided that I don't like chicken that much anymore.)
A few years ago my friend Starr told me about how when she was young, her mom used to pile leftover mashed potatoes from the previous night's dinner into a frying pan in the morning. She would make a well in the middle of her heap and crack in a couple of eggs to make a hearty (and so tasty) breakfast. I've been doing it ever since. I love my eggs and mashed potatoes topped with spinach and aged cheddar cheese.
I really blew myself away with this one! I put together a dry rub, braised these ribs for 2 hours on low heat with Mississippi Mud (beer) and made the barbeque sauce myself, the perfect mixture of spicy and sweet. At the end of the process the meat literally fell right off the bones.
Coupled with a side of creamy garlic mashed potatoes and a kale salad. SO GOOD!
