Weekend “Valentine’s Day” lunch. We don’t really celebrate Valentine’s Day, but it’s a great excuse to get in the kitchen and cook a good meal.

Well it was Pi day yesterday, but we didn't have our Pi until today.
A joint effort in the kitchen this morning, I got the filling ready and then Graham filled the dish up, before popping it into the oven.
The potatoes then went on to boil and he mashed them while I made the gravy.

This is how I spent my Thanksgiving holiday this year. There is approximately one hundred hours of retouching in this image and well over 500 layers. In fact, the file was so massive that I had to continue to flatten my image, save a new version, then continue building on top of that flattened image. I'll be making a walk through of how to tackle an image like this soon from a retouching perspective. Hope everyone is enjoying their holiday season!
Because I’ve been known to eat a Thanksgiving meal that consists almost entirely of mashed potatoes and gravy, I replace the cream and some of the butter in the recipe with an aromatic garlic and chile infused broth that I cook the potatoes in, resulting in lighter mashed potatoes that are BIG on flavor. Make it pretty. You eat with your eyes first. Three years ago, I lost 62 pounds, all the weight I had to lose. I've kept it off for two years now. I'm never going back. Why would I when I can eat like this and maintain my goal weight.
One of the best restaurant meals I've had in a long time. The fried okra may be the best I've ever had.
A dear one made us a delicious warm potato dish. It’s made with beets, corn and spices, and while out might seem crazy, it’s delicious- even cold! It’s sort of a cross between mashed potatoes and potato salad.

A 'joint' effort for our Sunday lunch today. Graham dealt with the meat and the peas while I did the mashed potatoes and gravy.
It was perfect for a very cold and windy day. Far too cold to go out between rain showers in the wind. Roast pork, with mashed potatoes, peas, gravy and apple sauce.
Will catch you all tomorrow, good evening for TV.

This weekend is when Canadians celebrate their Thanksgiving - Monday is the actual Thanksgiving Day - so I wanted to wish everyone a Happy Thanksgiving, no matter what part of the world you are living in or serving in. We have SO much to be thankful for every day, in this country! A special thank you to everyone who has been helping to make this pandemic more bearable for the rest of us, especially those involved in Health Care, risking your own health and lives and making so many sacrifices for the rest of us. Endless others who provide us with things like food. I could go on and on and on .... Have a happy, SAFE time, everyone!
This photo shows the Thanksgiving meal that I ordered from Forage Foods in Calgary. Their food is SO good, all made from produce from local farms. During the pandemic, it has been even more important to support small businesses, and this is one of the ones that I enjoy supporting. The maple mustard roasted squash and the herb buttered vegetables were delicious along with the mashed potatoes, stuffing and turkey. It also came with a salad.
