Manuka flowers are native to New Zealand and Australia. Their honey, with its "Active UMF Factor", is considered to have antiviral and antibacterial properties. "Most people who buy Manuka honey simply put it on their toast or in their tea, but where it really comes into its own is in treating wounds. In New Zealand, it has long been used in this way and studied extensively. Now, the NHS is doing the same."
The honey bee proved quite difficult at first as it took many sketches to get the right proportions...and then when it came to adding colour, I had to first experiment with quite a few different techniques
in the hope of capturing all of his different textures!

How can I not be intrigued by a granola recipe that is made with merely 2 tablespoons of oil for 8 cups of oats! The oats and nuts are moistened with banana puree, honey, and maple syrup. To my utter surprise, they are crunchy with a hint of caramel (and a big hint of banana of course). It's addictive!
I finally come to the realization that the key to crunchy granola has much to do with skill and technique. Baking them at relatively low heat (300F) and stirring every 10 minutes to ensure even browning are key to success. Another reason that endears this recipe to me? It's a great way to use up over-ripe bananas. Oh, and using sesame seeds is a pretty brilliant idea too.

From the Stony Bay to the Lookout- we finished the last half of the walk by coming in from the other end at Stony Bay a few days later(& in the process missing a very steep climb to the lookout) From start to finish the walk is 7kms but to drive from the start to end it's 56kms on some very winding narrow gravel roads.
