You can substitute parmesan or asiago, as I have had to in the past because I had never seen manchego and didn't know what I was looking for. I also don't know if $3.90 is a reasonable price.

Taller Quesero en Cabañeros
Un típico bombo manchego en la linde entre los términos municipales de Socuéllamos y Tomelloso (Ciudad Real, La Mancha).
Manchego "cracker" (cheese poofs for adults). Manchego cheese grated and blended with tapioca flour and water until smooth. Next placed between two sheets of plastic and rolled to about 1/8th inch thickness. Then, steamed for 24 minutes (12 on each side). Next dehydrated for about 3 hours. Finally, fried in canola oil for a few minutes at 425 F.
Served with slices of prosciutto di parma and maple syrup. Smoked salt and sprinkles of grated Manchego.
